Wash the apricots under running lukewarm water. Touch the fruit: a ripe apricot should be slightly soft to the touch, but not mushy. Cut each apricot in half lengthwise, remove the pit, and place the halves cut side up on a plate.

Use a sharp knife and a stable cutting board. If the apricots are very soft, work gently to avoid crushing the flesh.

Preparation of lemon and honey

Cut the lemon in half. Squeezing by hand over a small bowl, squeeze the juice from half of the lemon (about 20–30 ml), removing the seeds. Add honey to the juice and stir with a teaspoon until the honey partially dissolves. This will help the honey mix more easily with the cold buttermilk.

Use a strainer to remove the seeds. If the honey is crystallized, briefly heat it in a water bath (bowl in hot water) just until it reaches a liquid consistency.

Blending

In the blender jar, place the apricot halves (pulp), pour in the buttermilk (300 ml), add the honey-lemon mixture and a pinch of salt. Add crushed ice (200 g). Cover the blender and blend on medium power for 30–45 seconds, until the smoothie is smooth, without larger pieces of apricot. If you are using an immersion blender, blend for about 45–60 seconds, moving it up and down.

Use a blender with a power of 600 W or more for a smooth consistency. Blend in short bursts if the ice is in large chunks. When the cocktail is ready, there should be no visible large pieces of fruit, and the surface may be slightly frothy.

Try the cocktail with a spoon. If you want it sweeter, add an extra teaspoon of honey and blend briefly again (10–15 seconds). If the drink is too thick, add 1–2 tablespoons of buttermilk or cold water and mix to the desired consistency.

Pour the cocktail into two tall glasses. If you are using natural yogurt (optional), add 1 tablespoon of yogurt on the surface and drag a toothpick through it to create a decorative pattern. Garnish with a few mint leaves (optional) and possibly add extra ice.
