Activating the yeast: in a small saucepan or in the microwave, gently heat 100 ml of milk to a temperature of 35–37°C (it should be noticeably warm but not hot; a test on the inside of your wrist should feel pleasantly warm). Crumble 25 g of fresh yeast into a bowl, add 10 g of sugar from the pool and 50 ml of the warmed milk, and mix with a fork until the yeast dissolves. Set aside for 8–10 minutes; a foam and a light "cap" of bubbles should appear on the surface, indicating that the yeast is active.
