Description

Delicate cheesecake balls coated in dark chocolate are an elegant yet fun appetizer for a Halloween party. This is a mini version of the classic cheesecake in the form of a handy ball — a creamy interior made from cottage cheese, butter, and butter cookies, covered in a crunchy chocolate coating. They can be served on a platter as "naked brains" (with light streaks of white chocolate) or decorated with chopped nuts and orange zest, adding a fall aroma. Perfect as a sweet-salty appetizer for tea, coffee, or as a sweet touch during an evening gathering; they look impressive and taste sophisticated — creamy, slightly buttery, with a distinct hint of cocoa and dark chocolate on the outside.

Preparation steps

Cheese dough

1

Prepare all the ingredients for the cheese filling. Take the cottage cheese and butter out of the fridge about 20–30 minutes beforehand to soften. If the cottage cheese is too wet, drain it on cheesecloth for 10–15 minutes. In a large bowl, place the cottage cheese, softened butter, and powdered sugar.

Ingredients: Semi-fat cottage cheese, Butter, Powdered sugar
Use a large bowl (about 3–4 l) and a hand or stand mixer with a mixing attachment; if you don't have a mixer, use a wooden spoon and vigorously mash the cottage cheese with a fork for 3–5 minutes.
2

Beat the ingredients until smooth: start on a low speed to avoid splattering the powder, then increase the speed and beat for 1–2 minutes until the mixture becomes creamy and uniform. Add the egg and mix briefly (about 30 seconds) until the ingredients are combined.

Do not beat too long after adding the egg — it is enough for the mixture to be uniform. Use a mixer with a whisk or hooks for the cheese mixture.
3

Add the crushed butter cookies and cocoa to the cheese mixture. If you want a more pronounced orange flavor, add the orange zest now. Mix with a spatula until the dry ingredients are evenly incorporated (about 30–60 seconds). The mixture should be thick but pliable.

Ingredients: butter cookie, Cocoa, Orange zest
If the mixture is too runny, add an additional 10–20 g of butter cookies; if too dry, add 1 tablespoon of 30% cream.

Cooling the mixture

4

Cover the bowl with plastic wrap and place it in the refrigerator for 30 minutes. The chilled mixture will be easier to shape into balls and will not melt when in contact with the chocolate.

Use a flat container so the mixture cools evenly and more quickly. Don't skip the cooling — a mixture that is too soft will make shaping difficult.

Shaping

5

On a work surface, lay out a piece of parchment paper. Use a tablespoon to scoop a portion of the mixture and shape it into a ball the size of a walnut (about 18–22 g of raw mixture) using your hands. Roll it between your palms several times, applying slight pressure to make the surface smooth. Place the balls on the paper, leaving space between them.

Ingredients: Semi-fat cottage cheese, butter cookie
Use an ice cream scoop or two tablespoons if you don't want to shape them by hand. Lightly wet your hands with water or dust them with cocoa powder to prevent the mixture from sticking.

Cooling

6

Place the shaped balls in the refrigerator for 20–30 minutes, until they harden enough to be dipped in chocolate without deforming.

Arrange the balls in a single layer on a tray. Chilling is key — do not skip this step unless you are using the quick freezing method (shorter, 10–15 minutes).

Chocolate glaze

7

Prepare the ganache: chop the dark chocolate and place it in a bowl. In a small saucepan, heat the cream until bubbles appear at the edge (do not boil). Pour the hot cream over the chopped chocolate, wait 30 seconds, then stir from the center outward until a smooth, glossy sauce forms. If the mixture is too thick, add 1–2 teaspoons of warm cream.

Ingredients: Dark chocolate, 30% cream
Use a heatproof bowl and a saucepan for a water bath if you're worried about burning. The ganache is ready when it is silky and lump-free (about 2–3 minutes of melting and stirring).

Glazing

8

Prepare two forks or special dipping forks. Scoop a ball onto the fork and dip it in the ganache, gently tapping to remove the excess. Place the coated ball on parchment paper. Repeat with the remaining balls. The chocolate should set at room temperature or faster in the fridge (10–15 minutes).

Ingredients: Dark chocolate
If the ganache sets too quickly, heat it briefly over steam. Do not immerse the balls for too long to avoid softening the inside. A spoon or fork for confectionery pralines works best.

Decoration

9

Melt the white chocolate in a water bath and transfer it to a bag with the tip cut off to draw thin lines. Draw patterns on the set glaze: spider web, eyes, or stripes. Sprinkle some of the balls with chopped walnuts for texture contrast. If using, gently dust a few balls with cocoa for a dark effect.

Ingredients: White chocolate, Cocoa
Use a small piping tip or decorating bag for precise decoration. White chocolate sets quickly — work in small batches. Additionally, you can add walnuts to enhance the flavor/texture.

Serving and storage

10

Once the chocolate has set, transfer the balls to a platter lined with lettuce leaves or decorative paper. Serve chilled (slightly cold) — they taste best 15–30 minutes after being taken out of the fridge, when the inside is creamy but not as cold as the fridge.

Ingredients: Orange zest
Place the balls with space in between so the decorations don't stick together. Additionally, you can add orange zest for flavor.

Fun Fact

💡

Mini cheesecakes in the form of balls are a variation on French pralines and Polish cheesecake; the bite-sized shape has gained popularity due to the convenience of serving at parties, and the Halloween decorations are a modern twist.

Tips

🍽️ Serving

Serve on a dark platter or board, add artificial spider webs and glowing lights for a Halloween vibe. Serve slightly chilled (15–20 minutes at room temperature before serving) for a creamy texture. Pairs well with aromatic coffee or black tea with spices.

🥡 Storage

Store in the refrigerator in an airtight container for up to 4 days. To prevent the decorations from breaking, arrange them in a single layer. Do not freeze the chocolate balls (the chocolate may crack). To defrost, transfer from the freezer to the refrigerator for 2–3 hours, then to room temperature for 30 minutes before serving.
