Description

Gyros is an iconic Greek street food, where slices of marinated pork are roasted on a vertical spit, shaved off, and served in warm pita with vegetables and tzatziki sauce. The name comes from the Greek word meaning 'turn' - from the rotating spit from which the meat is shaved. In the homemade version, a marinade of yogurt, oregano, and paprika is used for thin slices of meat fried in a pan. Preparation steps

Prepare the marinade: mix yogurt, half of the olive oil, lemon juice, garlic, oregano, paprika, and cumin.

Slice the pork neck into thin slices (about 5mm). Mix with the marinade and set aside for at least 4 hours.

Prepare tzatziki: grate the cucumber, squeeze out the water. Mix 150g of yogurt with the cucumber, garlic, and olive oil.

Heat a pan over high heat. Sear the meat in batches for 3-4 minutes on each side.

Chop the tomatoes and onion. Prepare the fries in your favorite way.

Heat the pita on a dry skillet.

On each plate, arrange the meat, vegetables, and fries. Drizzle generously with tzatziki.

Roll tightly and serve immediately. You can also serve it on a plate with pita on the side.
