Prepare the ingredients: check the dates, removing any pits if necessary. If the dates are hard or dry, place them in a bowl and cover with warm (not hot) water for 10–15 minutes to soften. After soaking, drain thoroughly in a sieve and pat dry with a paper towel.

Tools: bowl, sieve, paper towel. Common mistake: insufficiently draining the dates will make the mixture too wet and difficult to shape.

Toast the walnuts in a dry skillet for 3–4 minutes over medium heat, stirring every few seconds, until they become fragrant and lightly browned. Then cool them on a plate for 5–10 minutes — this will enhance the aroma.

Use a wide skillet (diameter 24–28 cm). Do not keep the nuts on the heat for too long — they burn quickly. Heating intensifies the flavor, but do not do it on maximum heat.

Grinding

Place the cooled nuts and oats into the blender or food processor. Pulse for 20–30 seconds until the nuts turn into coarser crumbs (not a complete paste). The goal is to achieve a texture: small pieces of nuts and ground oats.

Use a food processor with a power of at least 600 W or a blender with a pulse function. If you don't have a food processor, chop the nuts finely with a knife, which will take more time (about 5–7 minutes).

Mixing the batter

Add the drained dates, cocoa powder, and a pinch of salt to the ground nuts and flakes. If you are using peanut butter, add it now. Blend everything briefly in 30–60 second pulses until the mixture starts to stick together — pause and scrape down the mixture from the sides of the device with a spatula. The mixture should be moist, sticky, and able to be shaped into balls.

If the mixture is too dry and doesn't stick together, add 1 tablespoon (15 ml) of water at a time and blend again. If it is too wet, add 1–2 tablespoons of oats. A common mistake: blending too long until a smooth paste forms — the balls should have a delicate texture.

Shaping

Prepare the surface for shaping: a small plate or board and a container with coconut flakes (if using). Take about 20–25 g of the mixture (approximately the size of a large ice cream scoop) and shape it into a ball in your hands — gently squeeze, rolling it between your palms until a smooth ball forms.

Tools: kitchen scale (optional) or ice cream scoop for measuring portions. If your hands are sticky, lightly moisten them with water (not too much). The time to shape one ball is about 10–15 seconds.

Coating the balls: roll each formed ball in coconut flakes (or in additional cocoa or ground nuts). To coat evenly, place the flakes on a small plate and roll the ball over the surface, applying slight pressure.

If you don't want coconut flakes, roll the balls in cocoa powder or finely ground nuts. Additionally, you can add a pinch of finely chopped parsley for decoration (an unusual twist).

Cooling and serving

Place the prepared balls on a plate or in a container and put them in the refrigerator for at least 30 minutes to firm up and gain a solid consistency. Serve chilled after removing.

Container: airtight box or jar. The balls are firmer after cooling; if you plan to store them for more than 3 days, it's better to freeze them (see storage tips).
