Description

Aromatic couscous with roasted pumpkin and tart cranberries is an autumn side dish perfect for Halloween meals: it pairs well with roasted duck, game meat cutlets, or as a colorful element on the table. The dish combines the sweetness of roasted pumpkin, the softness of couscous, and the contrast of dried cranberries along with delicate hints of thyme; served in a golden-orange color with red accents from the cranberries, it pairs wonderfully with toasted nuts and goat cheese as an optional "scarily good" twist.

Preparation steps

Baking pumpkin

1

Preheat the oven to 200°C (top-bottom). Wash the pumpkin, cut it in half if it's large, remove the seeds with a spoon, and peel it if the variety requires it (hokkaido can be baked with the skin on). Cut the flesh into cubes about 2 cm on each side. In a large bowl, mix the pumpkin pieces with 2 tablespoons of rapeseed oil (30 g) and 1 teaspoon of thyme (2 g) along with 1-2 pinches of salt. Spread evenly on a baking sheet lined with parchment paper.

Ingredients: Pumpkin, Rapeseed oil, Thyme, Salt
Use a large baking sheet with a rim or a baking dish. The pieces of pumpkin should be in a single layer to brown evenly. If the pumpkin is large, bake in two batches.
2

Place the pumpkin in the preheated oven and bake for 25-30 minutes. After 20 minutes, check with a fork: the pumpkin should be soft inside, and the edges slightly browned. If the fork easily goes into the flesh and the pieces have a golden color, they are ready.

Ingredients: Pumpkin
Use kitchen gloves when taking out the baking tray. Do not bake for too long, as the pumpkin will fall apart - we want softness, but also pieces that hold their shape.

Preparing couscous

3

In a medium bowl, pour in the couscous (240 g). Bring vegetable broth (360 ml) to a boil in a small pot or kettle. Pour the hot broth evenly over the couscous, cover tightly with a plate or lid, and set aside for 8-10 minutes - the couscous will absorb the liquid and swell.

Ingredients: Couscous, Vegetable broth
Use a bowl with a capacity of at least 1.5 liters. The bowl should have a lid or cover it with plastic wrap. Do not stir for the first 8 minutes - this is when the couscous will evenly absorb the broth.

Frying the Aromatics

4

While the couscous is soaking, peel and finely chop the onion (150 g). Heat 1 tablespoon of rapeseed oil (15 g) in a pan. Add the onion and sauté over medium heat for 4-5 minutes until it becomes translucent and soft, stirring with a wooden spoon. Add the chopped garlic (10 g) and sauté for another 30-40 seconds - the garlic should be fragrant but not burnt.

Ingredients: Onion, Rapeseed oil, Garlic
Use a frying pan with a diameter of about 24-28 cm with a non-stick coating. The onion should be translucent and slightly soft - that means it's ready. If the garlic starts to brown, the heat is too high.

Mixing and seasoning

5

When the couscous has absorbed the broth (after 8-10 minutes), remove the lid and gently fluff the couscous with a fork - do this gently, lifting the grains upwards rather than stirring vigorously. Add to the couscous the sautéed onion with garlic, roasted pumpkin (cooled), dried cranberries (80 g), and 20 g of butter. Gently mix everything with a fork or a large spoon, being careful not to break the pieces of pumpkin.

Ingredients: Couscous, Onion, Garlic, Pumpkin, Dried cranberries, Butter
Use a wide spoon or fork to fluff the couscous. Fluffing will make the couscous light and not compact. If you want a vegan version, skip the butter and add 1 tablespoon of oil.
6

Season the dish with 2 pinches of pepper (2 g) and 2 pinches of salt (use the remaining salt if needed). Taste and add a bit more salt or pepper if necessary. If the flavor is too sweet from the cranberry, add an extra squeeze of lemon juice or 1/2 teaspoon of apple cider vinegar (optional).

Ingredients: Salt, Black pepper
Season gradually and taste. Salt brings out the flavors, while pepper adds spiciness. Don't overdo the vinegar - it should just be an accent.

Finishing and toppings

7

If you are using walnuts (50 g), toast them in a dry pan for 2-3 minutes over medium heat until fragrant and lightly browned. Add the nuts to the couscous along with the crumbled goat cheese (80 g) just before serving and gently mix to evenly distribute the ingredients.

Ingredients: Ser kozi
Toast the nuts in a dry pan and shake every few seconds to prevent burning. Add the goat cheese at the end, as it will melt faster and change consistency.

Serving

8

Serve the couscous in a warm serving dish or smaller bowls. Form a mound of couscous, decorate with a few pieces of roasted pumpkin on top, and sprinkle additional cranberries and nuts. If you are using goat cheese, crumble it on top. Serve the dish immediately as a side to meats or as a standalone autumn plate.

Ingredients: Couscous, Pumpkin, Dried cranberries, Ser kozi
Use a large platter to showcase the color contrast of orange and red. Serve immediately after preparation, as the couscous loses its fluffiness with longer storage.

Fun Fact

💡

Couscous comes from North African cuisine, but in Poland, it has been associated with regional flavors for years; the addition of pumpkin and cranberry is an autumn variant that fits perfectly into the Halloween color scheme of the table.

Tips

🍽️ Serving

Serve warm as a side dish to roasted meats (duck, pork) or as a standalone dish with a cabbage salad. For a spicier version, add thinly sliced fresh chili or orange zest for aromatic contrast.

🥡 Storage

Store in an airtight container in the refrigerator for up to 2 days. Before serving again, gently heat in a pan with a little water or broth (1-2 tablespoons) and stir to restore moisture. Avoid freezing, as the texture of the pumpkin may break down.
