Description

A light, summer dessert combining creamy natural yogurt with fresh berries: blueberries, raspberries, and blackberries. It's a quick option for hot days — refreshing, slightly tangy from the fruits, and gently sweetened with honey. The dessert is visually appealing: the layers of white yogurt and the vibrant colors of the fruits create a striking contrast. It can be served as a standalone dessert after a meal, at a picnic, during a barbecue as a light sweet snack, or for breakfast on the go. Suitable for vegetarians and easily adjustable to calorie and sweetness preferences — I suggest using wooden spoons and clear cups for serving to showcase the layers.

Preparation steps

1

Prepare the fruits: place the blueberry, raspberry, and blackberry in a large colander. Rinse them gently under cold running water for about 10-15 seconds — do not rub, as the raspberries and blackberries will break apart. Set the colander aside for 2 minutes, then spread the fruits on a clean paper towel and gently dry them using a second towel, softly pressing it against the fruits.

Ingredients: blueberry, Raspberry, blackberry
Use a fine sieve and two sheets of paper towel. Do not soak the fruits for too long; a quick rinse is better. For frozen fruits, thaw in the sieve and drain excess juice.
2

Prepare the yogurt: pour the natural yogurt into a large bowl. Taste a little to assess the sweetness. If you want to sweeten it, measure out the honey and heat it in a small bowl in the microwave for 8-12 seconds (not longer) — it should be liquid, not hot. Pour the honey into the yogurt and vigorously mix with a spoon for about 20-30 seconds until the mixture becomes uniformly sweet and creamy.

Ingredients: Natural yogurt, Honey
Use a large, deep bowl and a tablespoon. If you don't have a microwave, immerse the jar of honey in warm water for a few seconds, do not boil. If you prefer the version without honey, skip this step.
3

Layering: prepare 4 bowls or glasses. At the bottom of each portion, add about 75 g of yogurt (use a spoon), then place 25 g of the fruit mixture (a few blueberries, a few raspberries, a few blackberries). Repeat the layers once more: again 75 g of yogurt and 25 g of fruit, so that each portion has 150 g of yogurt and 100 g of fruit. Leave a few nice fruits on top for decoration.

Ingredients: Natural yogurt, blueberry, Raspberry, blackberry
Use an ice cream scoop or a regular tablespoon for even layering. Measuring with a spoon will help maintain aesthetic layers. If you want a 'parfait' effect, layer slowly, gently pressing the layers to avoid creating large empty spaces.
4

Prepare a crunchy topping (optional): set a dry skillet over medium heat and add 40 g of oats. Toast for 2-3 minutes, stirring with a wooden spoon, until the oats are lightly browned and smell nutty. Remove from heat immediately to avoid burning. Sprinkle the oats over each serving just before serving.

Ingredients: Oat flakes
Use a flat, non-stick pan and stir constantly. If the flakes start to stick or darken, the heat is too high — reduce the temperature.
5

Finishing and serving: place 3-4 whole fruits on top of each portion as decoration. If you want extra sweetness, drizzle 5-10 g of honey (about half a teaspoon) on each portion. Serve immediately or chill for 10-15 minutes in the refrigerator if you prefer a very cold dessert.

Ingredients: blueberry, Raspberry, blackberry, Honey
For serving, use small spoons and transparent cups to showcase the layers. Do not add the flakes too early — they will lose their crunch when in contact with the yogurt.

Fun Fact

💡

In gastronomy, layered desserts with yogurt and fruits resemble the French 'parfait', but in Poland, simple versions with yogurt and fruits are popular, using local forest fruits — blueberries and raspberries picked in the summer in many regions of the country.

Tips

🍽️ Serving

Serve in clear cups or jars to showcase the layers. For children, reduce the amount of honey or replace it with applesauce. For a more elegant presentation, add fresh mint leaves and finely grated lemon zest on top.

🥡 Storage

Best consumed immediately or stored in the refrigerator in closed containers for up to 24 hours. If the dessert was made with frozen fruits, use it the same day. Add the oats just before serving, as they lose their crunch.
