Description

Modern, spring tabbouleh inspired by Middle Eastern cuisine, but with a Polish twist: instead of bulgur, we use lightly toasted millet, and the addition of fresh herbs is complemented by tart rhubarb and sorrel, while delicate asparagus and cucumber add crunch. The dish is fresh, aromatic, balanced with the acidity of lemon and rhubarb, and an olive-mustard dressing. Perfect as a light lunch, an appetizer for a spring gathering, or a side dish for grilled meats and fish; it looks great thanks to the contrast of pink rhubarb, green herbs, and the creamy color of the millet. Serve chilled or at room temperature.

Preparation steps

Buckwheat

Preparing the millet: pour the millet into a fine-mesh sieve and rinse under running hot water for 30–40 seconds, stirring with a spoon until the water becomes clear — this removes the bitterness. Transfer the millet to a medium pot (about 1.5–2 l).

Use a fine sieve and a medium pot with a lid. Rinsing is key — do not skip this step, otherwise the grain may have a bitter taste.

Add 420 ml of water and a pinch of salt (about 1 pinch) to the pot with the rinsed groats. Bring to a boil over medium-high heat, cover with a lid, reduce the heat to low, and cook for 12–15 minutes until the water is absorbed. After cooking, remove from heat and let it sit covered for 10 minutes, then fluff with a fork and set aside to cool.

Use a pot with a matching lid. Cook on low heat — too high a temperature will cause burning. Fluffing with a fork prevents the grains from sticking together.

Rhubarb

Prepare the rhubarb: trim the ends, peel off the thin, stringy skin if it is very fibrous, and then cut it into diagonal slices 7–10 mm wide. In a bowl, mix the chopped rhubarb with 30 g of sugar and set aside for 10 minutes to release its juice.

Use a sharp knife and a cutting board. If the rhubarb is very young and soft, you can skip peeling.

Quickly pre-cook the rhubarb: heat a pan (preferably 24–26 cm) over medium heat, add one tablespoon of rapeseed oil (15 g) and toss in the rhubarb along with the juice, sauté for 2–3 minutes, stirring, until the pieces soften but retain their shape. Remove from heat and let cool.

Use a non-stick frying pan. Do not overcook — the rhubarb should be tender-crisp, not mushy. Additionally, you can add a teaspoon of honey if you like sweeter contrasts (optional).

Vegetables and herbs

Prepare the vegetables: wash the cucumber and cut it lengthwise, remove the thicker seeds with a spoon if they are watery, and chop into small cubes. Break off the ends of the asparagus (they will snap naturally) and cut into diagonal pieces of 1–2 cm. Thinly slice the green onion (finely chop the white part, and slice the green parts diagonally). Finely chop the parsley (only the leaves), and cut the sorrel into thin strips, removing the thick stems. Finely chop or crush the garlic — use a small amount (1 clove) so it doesn't overpower the salad.

Use a sharp chef's knife and a stable cutting board. To chop herbs, gather them into a bunch and cut with a sharp knife, avoiding sawing motions.

Dressing

Prepare the dressing: in a small bowl, mix 30 g of rapeseed oil with the juice of half a lemon (about 20–25 ml — squeeze from the whole lemon to taste), add 15 g of mustard, freshly ground pepper (about 2 pinches), and 1–2 pinches of salt. Whisk vigorously with a fork or whisk until the dressing becomes smooth and slightly thickens.

Use a small bowl and a fork or mini whisk. Taste the dressing before adding it to the salad — it should be pronounced, slightly tangy, but not overpowering.

Assembly

In a large bowl, combine the cooled millet, chopped vegetables (cucumber, asparagus, spring onion), chopped parsley, and sorrel. Add the sautéed rhubarb. Drizzle with the prepared dressing and gently mix with a wooden spoon — stir briefly to avoid breaking the rhubarb.

Use a large, wide bowl (preferably glass or ceramic) to gently mix the ingredients without crushing the rhubarb. If the salad seems too dry, add a little lemon juice.

Season to taste: try the salad and add salt, pepper, or lemon juice if needed. Set the salad aside in the fridge or a cool place for 10–15 minutes to let the flavors meld. Before serving, gently mix again.

Letting the salad sit allows the grains to absorb the flavor of the dressing and softens the acidity of the rhubarb. Do not keep it longer than 24–48 hours — fresh herbs lose their aroma.

Serving

Serving and decoration: transfer the salad to a platter or portion it onto plates. Optionally crumble 100 g of goat cheese on top and sprinkle with 30 g of toasted pumpkin seeds for crunch. Serve chilled or at room temperature.

Use a wide spoon or spatula to portion out, so as not to crush the ingredients. Additionally, you can serve lemon slices on the side for seasoning.

Tabbouleh is a traditional salad from the Levant region, usually made with bulgur and a large amount of parsley. Replacing bulgur with millet is a popular adaptation in fusion cuisine — it adds a light, nutty flavor and is a gluten-free option.
