Aromatic roasted beet salad with creamy goat cheese, crunchy walnuts, and fresh arugula. The dish combines the sweet-earthy flavor of beetroot with the mildly salty goat cheese, the acidity of balsamic vinegar, and the sweetness of honey—all highlighted by roasted pumpkin seeds as a "Halloween" touch. It works well as an appetizer or a light dinner; it pairs wonderfully with dark whole grain bread or thick toast. Visually: deep purple slices of beet and white "spots" of goat cheese create a contrast perfect for a dark autumn table setting.
Preheat the oven to 200°C (top-bottom). Wash the beets thoroughly under cold water with a brush, trim the roots and leaves close to the root (you can save the leaves for another dish). Wrap each beet tightly in aluminum foil individually to retain moisture during baking.
Use a baking tray lined with parchment paper or a rack. The foil will prevent the beets from drying out. Do not peel the raw beets before roasting — the skin will come off more easily after roasting.
2
Place the wrapped beets on a baking sheet and bake at 200°C for 50–60 minutes (time depends on size: smaller ones 35–45 min, larger ones 60–75 min). Check with a fork: insert it into the largest beet — it should go in smoothly, and the beet should be soft inside.
Check every 10 minutes after 40 minutes to avoid missing the perfect tenderness. If your oven has a convection setting, you can lower the temperature to 190°C and bake for a shorter time.
3
After baking, let the beets cool for 10–15 minutes until they can be touched. Remove the foil and, using a knife or kitchen glove, peel off the skin — it should come off easily. Cut each beet into thin slices (about 3–4 mm) or into wedges if they are very large.
Use a sharp knife and a cutting board. If beets stain your hands, use disposable gloves or wash your hands immediately with soap and lemon juice.
Roasting nuts and seeds
4
Heat a dry skillet over medium heat. Add walnuts (80g) and pumpkin seeds (30g) — toast them for 4–6 minutes, stirring every 30 seconds, until they start to release their aroma and darken slightly. Be careful not to burn them.
The best pan is 24–28 cm in diameter. Use a wooden spoon for stirring. When you smell a nutty aroma, immediately remove from heat.
Dressing
5
In a small bowl, pour in the rapeseed oil (30 ml) and balsamic vinegar (30 ml). Add honey (15 g) if using, salt (3 g), and black pepper (2 pinches). Whisk vigorously with a fork or whisk until the dressing becomes smooth and slightly thickened.
Ingredients:
Rapeseed oil, Balsamic vinegar, Honey, Salt, Black pepper
Use a small bowl with a capacity of 300–500 ml or a jar with a lid — you can shake the jar to emulsify the dressing. If the dressing seems too oily, add 1 teaspoon of water.
Preparation of toppings
6
Wash the apple, cut it in half, remove the core, and slice it into thin half-moons (about 2–3 mm). Slice the onion into very thin rings; place them in a bowl of cold water for 5 minutes to mellow the sharpness, then drain in a sieve.
Ingredients:
Apple, Red onion
Use a mandoline to slice the apple evenly, but be careful. You can drizzle the apple slices with a little lemon juice to prevent them from browning.
Assembly and seasoning
7
In a large bowl, place the arugula (80 g). Drizzle with half of the dressing and gently toss with your hands or tongs to lightly coat the leaves. Evenly arrange the slices of roasted beets on the arugula, add the apple slices, and the drained onion.
Ingredients:
Arugula, Apple, Red onion, Rapeseed oil, Balsamic vinegar, Honey, Salt, Black pepper
Use two salad spoons or your hands to mix — gently, so as not to crush the beets. Add the dressing gradually; it's better to add more at the end than too much at once.
Assembly and serving
8
Crumble the goat cheese (200 g) on top of the salad in large pieces — this will make the white-purple contrast stand out. Sprinkle everything with toasted walnuts and pumpkin seeds (if using). Drizzle with the remaining dressing and season to taste with salt and freshly ground pepper.
Ingredients:
Ser kozi, Salt, Black pepper
Use a teaspoon to gently place pieces of cheese — larger pieces look more interesting than completely crumbled cheese. Additionally, you can add a few drops of good extra virgin olive oil on top for flavor.
Decoration (optional)
9
For a Halloween effect, place a few rounds of goat cheese as 'eyes' and press half a walnut into each as the 'pupil'. You can sprinkle the salad with a bit of black sesame for color contrast.
Ingredients:
Ser kozi
Additionally, you can add more pumpkin seeds for crunch. Be careful with decorative additions — they should enhance, not overpower the flavor.
Fun Fact
💡
Beets have been cultivated in Europe since ancient times; they were primarily used as medicine in the past. The combination of beetroot and goat cheese is a modern adaptation of the traditional sweet-sour-salty pairing.
Serve the salad chilled, but not icy — the best temperature is slightly cool (about 10–12°C). Serve on a dark plate to highlight the color contrast; accompany the salad with dark bread or a baguette spread with butter.
🥡Storage
Store the dressing separately in a sealed jar for up to 5 days in the fridge; store the salad with toppings in the fridge for up to 24 hours in a sealed container. To reheat the beets before serving, you can warm them slightly in the oven for 5–7 minutes at 100°C, but do not heat them with cheese.
