In a small bowl, pour in olive oil (30 g), balsamic vinegar (15 g), lemon juice (15 g) and add honey (15 g). Add salt (1 g) and pepper (1 g). Whisk vigorously with a fork or whisk for about 20–30 seconds, until the honey dissolves and the dressing becomes smooth and slightly thickened.
Grilling oscypek
Cut the oscypek into slices about 1–1.5 cm thick. Heat a grill pan or non-stick pan over medium heat for 3–4 minutes. Lightly drizzle the surface of the pan with oil (a few drops) and place the cheese slices so that they do not touch each other. Fry for 2–3 minutes on each side until visible grill marks appear and the cheese starts to soften (it should be golden-brown, not burnt). Sprinkle with fresh thyme just before removing from the pan.
Preparation of toppings
If you are using walnuts (optional), chop them coarsely and toast in a dry pan for 2–3 minutes until fragrant and lightly golden. Set aside to cool.
Salad Assembly
In a large bowl with arugula, add the chopped strawberries. Drizzle 2/3 of the prepared dressing (set aside the remaining part for decoration). Gently mix the arugula and strawberries with a fork or your hands for 10–15 seconds, so the leaves do not lose their crispness. Transfer the mixture to plates.
Arrange the grilled slices of oscypek on top of the salad. Drizzle with the remaining dressing (the rest from the bowl) and scatter the chopped nuts. Sprinkle with fresh basil leaves (10 g) and freshly ground pepper for aroma.
