Transfer the cottage cheese to the prepared bowl. Using a fork or a potato masher, vigorously mash the cottage cheese for 2-3 minutes until the mixture becomes creamier and loses most of the lumps. If you prefer a very smooth consistency, briefly blend with an immersion blender for 10-15 seconds.
Add 40 g of honey to the cottage cheese in a thin stream and mix for 30-45 seconds with a whisk or fork to evenly distribute the honey. The combined ingredients should form a smooth, slightly glossy mixture. Taste and sweeten with an additional teaspoon of honey if needed.
Transfer the creamy cottage cheese with honey onto two plates — about 125 g of the mixture per serving. Arrange the sliced strawberries around or on top of the cottage cheese. If using nuts, finely chop 30 g of nuts and sprinkle them over the servings.
