Description

Refreshing green smoothie combining fresh cucumber, mint, and kefir with the gentle sweetness of banana and a tangy hint of lime. This drink is perfect for spring mornings and hot days: light, hydrating, and easy to prepare. Thanks to the kefir, the smoothie has a creamy texture and contains beneficial probiotic bacteria, while cucumber provides a high water content and a delicate, plant-based aroma. Mint adds freshness and a clean, cooling finish. Serve chilled in tall glasses as a healthy breakfast, post-workout snack, or accompaniment to a light lunch. Appearance: light green color with small pieces of mint and cucumber, garnished with a mint leaf and a slice of lime.

Preparation steps

Preparation of ingredients

1

Wash the cucumber under running water with a vegetable brush, and dry it with a paper towel. If the skin is thick or waxed, peel it thinly with a peeler; otherwise, leave the skin on for extra color and fiber. Cut the cucumber into thick slices (about 1–1.5 cm) to make it easier to throw into the blender.

Ingredients: Cucumber
Use a cutting board and a sharp knife with a serrated or smooth blade. Do not blend whole, long cucumbers — pieces will make blending easier.
2

Peel the banana and cut it into thick slices (about 2 cm). Cut the lime in half and squeeze the juice using a manual citrus juicer directly into a small bowl to remove the seeds. Tear the mint leaves from the woody stems and roughly chop them with a spoon or knife.

Ingredients: Banana, Lime, mint
For squeezing lime, it's best to use a small juicer; if you don't have one, squeeze it by hand over a bowl and use a fork to release the juice. Don't chop the mint too finely — larger pieces look nicer and are easier to gather for decoration.

Mixing

3

In the blender jar, place the cucumber slices, banana slices, chopped mint, and lime juice. Pour in the kefir. If you are using honey, add it now. Cover the blender and blend on high speed for 45–60 seconds, stopping after 20–30 seconds to scrape down the ingredients from the sides of the jar and possibly add ice. The consistency should be smooth, uniform, and slightly liquid — if it is too thick, add 30–60 ml of kefir or a few ice cubes and blend again.

Ingredients: Cucumber, Banana, mint, Lime, Kefir, Honey, Ice
Use a jug blender with a power of at least 500 W; if you have an immersion blender, blend in a tall container in pulses for 1–2 minutes. Be careful not to fill the jug above the maximum capacity mark of the blender.

Seasoning and tasting

4

Try the smoothie with a spoon. If it's too sour, add a bit of honey (5–10 g) and mix with a short pulse of the blender. If it's too bland or thick, drizzle in some extra lime juice or add 30–50 ml of kefir and mix again. The final consistency should flow freely from the spoon but be creamy enough.

Ingredients: Honey, Kefir, Lime
Season gradually — it's easier to add sweetness than to remove it. Use a small teaspoon to taste and assess the balance of flavors.

Serving

5

Pour the smoothie into two tall glasses through a spoon or strainer if you prefer a smooth consistency without larger pieces. Garnish each glass with a mint leaf and a slice of lime on the rim. Serve immediately — best chilled.

Ingredients: mint, Lime, Ice
Use tall glasses with a capacity of 300–400 ml. If you plan to take the drink with you, transfer it to a sealed thermal container.

Cleaning

6

Immediately rinse the blender jar and accessories with warm water to remove any residue. If there is mint residue left, fill the blender with lukewarm water and a drop of dish soap, blend for a few seconds, and then rinse.

Use a sponge with soft bristles to clean the cup to avoid scratching the plastic. Remove the seal and wash it separately to prevent mold.

Fun Fact

💡

Cucumber is 95% water, which is why it has been valued as an ingredient in refreshing dishes and drinks in Central European kitchens since the 19th century; the addition of kefir combines Eastern European tradition with the modern smoothie trend.

Tips

🍽️ Serving

Serve very chilled, garnished with a mint leaf and a slice of lime. For the "to-go" version, pour into a sealed thermos bottle. To make a dairy-free version, replace kefir with plant-based buttermilk (oat or soy drink) and omit the honey, using more banana instead.

🥡 Storage

It is best to consume immediately after preparation. If you need to store it, pour it into an airtight container and keep it in the refrigerator for a maximum of 12 hours — after that, the taste and nutritional value deteriorate. We do not recommend freezing the smoothie as a whole, but you can freeze slices of banana and cucumber for later blending.
