Description
Chicken broth is a clear or slightly cloudy, golden stock with a delicate umami character, subtle sweetness from the meat, and an aroma of herbs that enhances dishes without overpowering their flavor. Its consistency can be slightly gelatinous when made from collagen-rich bones. It is low in calories and provides easily digestible protein, electrolytes, and minerals such as potassium and phosphorus; homemade broth also contains collagen and gelatin, which can support digestion and joint health. In the kitchen, it serves as a versatile base for soups, sauces, risottos, stews, roasts, and for cooking rice and grains, as well as a poaching liquid. Store in an airtight container, cool within two hours, refrigerate for 3–4 days, or freeze for up to 3 months; thaw in the refrigerator and reheat before serving.
