Description
Chili paste is a thick, intensely red or brownish-red mass with a spicy, aromatic flavor profile that combines the heat of capsaicin with a distinct hint of sweetness, acidity, and umami, depending on the additions (garlic, vinegar, vegetables). It appears uniform or with small pieces of peppers and seeds, and its spiciness can range from mild to very hot. Nutritionally, it is low in calories, rich in capsaicin, provitamin A, vitamin C, and antioxidants, which support metabolism, have anti-inflammatory properties, and may aid circulation; however, it is worth noting the salt and possible sugar content in ready-made products. In the kitchen, chili paste works great as a base for sauces, marinades, soups, stir-fries, noodles, dips, and salad dressings, as well as an addition to grilled meats and sandwiches, allowing for easy control of spiciness. Once opened, store it in the refrigerator in a tightly sealed jar and use it within a few weeks; it can also be frozen in portions, and a clean spoon should be used for serving to extend its shelf life.
