The drink combines the tart-sweetness of gooseberries with cool mint and the natural sweetness of honey, complemented by fresh lemon and sparkling water, making it perfect for hot days, picnics, and summer barbecues. It has a light green color with visible small seeds after straining — served in glasses with ice, it looks very appetizing. Excellent as a non-alcoholic drink during family gatherings, it can also be served with grilled dishes as a refreshing counterpoint to richer meats.

Separate the mint leaves from the thicker stems: grab the bunch at the base, sliding your fingers upwards to remove the leaves. Place the leaves in a bowl and rinse briefly under cold water, then dry on a paper towel or in a salad spinner.
Cut the lemon in half and squeeze the juice into a small bowl, straining the juice through a sieve to catch the seeds. Measure the juice — it should be about 30–40 ml from one medium lemon. The juice adds fresh acidity and stabilizes the flavor of the gooseberries.
Preparation of the puree
Place the gooseberries, mint leaves (reserve a few nice leaves for decoration), honey, and strained lemon juice in a blender. Blend on high speed for 45–60 seconds until the mixture is smooth but not completely clear (small seeds may remain). If your blender has a pulse function, start with shorter pulses to evenly break down the fruit.
Straining
Pass the blended mixture through a fine sieve into a large bowl, using a wooden spoon or spatula. Press the mixture firmly to extract as much juice and flavor as possible; the discarded seeds and thicker fibers will remain in the sieve. The straining should take about 2–3 minutes.
Mixing the drink
Pour the strained gooseberry juice into a pitcher, add the chilled sparkling water, and gently stir with a spoon from the bottom up to preserve the bubbles. Taste the drink and sweeten if necessary with a spoonful of dissolved sugar (if using) or an additional spoonful of honey — stir until dissolved. The mixture should be evenly colored and slightly fizzy.
Serving
In the glasses, add ice cubes (if using), pour in the drink, and garnish with a sprig of mint and whole gooseberries or a slice of lemon. Serve immediately to preserve the fizz and fresh mint aroma.

Gooseberry has been popular in Polish villages and orchards since the 19th century — it was valued for its ease of cultivation and versatile use: from compotes, to jams, to refreshing drinks. Mint, on the other hand, was commonly grown near the house as a medicinal herb and an addition to infusions.

Tips
Serve very chilled, with plenty of fresh mint and a slice of lemon on the rim of the glass. If you want a version without bubbles, replace the sparkling water with very chilled still water or green tea. For adults, you can add 30–50 ml of vodka or white rum per serving.
It is best to consume the drink immediately. Store in the refrigerator in a closed pitcher for up to 24 hours — after that, the bubbles from the sparkling water will fade and the flavor will become less intense. If the drink separates, gently stir before serving.
