Preparing the fruits

Wash the peaches under running water and dry them with a paper towel. Cut each peach in half lengthwise and gently remove the pit with a teaspoon. If the fruit is very soft and falling apart, be more careful when cutting - it's better to use a thin knife and support the fruit with a hand wrapped in a towel.

Use a sharp knife and a cutting board. If you don't have a stable board, place a damp cloth under the board to prevent it from sliding. Do not peel the peaches — the skin holds the flesh together while grilling.

Preparing the grill

Preheat the grill (or grill pan) to medium-high heat — the grate should be hot but not smoking. If you are using a charcoal grill, wait until the coals are covered with a light ash. Brush a thin layer of canola oil on the skin side of each peach half; this will prevent sticking and give nice grill marks.

Use a silicone brush or a paper towel soaked in oil. The best option is a grill pan with a ribbed surface or an outdoor grill. If you don't have a grill, use a dry, well-heated non-stick pan.

Turn to the other side and grill for 1-2 minutes flesh side down, just to gently warm the inside. The goal is to caramelize the surface, not to completely cook the fruit.

Use a fork or a small hand mixer on low speed. Lime juice adds freshness and prevents the sweetness of the honey from being overwhelming. Do not add salt — it is not needed in this dish.

On the plates, arrange the halves of the grilled peaches (cut side up). On each half, add 2–3 tablespoons of cottage cheese (about 100 g per serving). Drizzle each serving with a thin stream of linden honey — 1 tablespoon (about 15 g) per serving, and possibly more to taste. Sprinkle with toasted walnuts and fresh mint leaves.
