The flesh of ripe avocado mashed with lemon juice, olive oil, and garlic creates a velvety paste that we spread on crispy, lightly toasted slices of bread. The dish combines the freshness of tomatoes and onions with a slightly salty note of feta (optional) and a spicy touch of chili flakes or fresh sprouts. The sandwiches are filling, full of healthy fats, and look beautiful — the green paste with red tomatoes and white pieces of feta creates a color contrast that catches the eye. Serve immediately after preparation, with sparkling wine or slightly sour cider.

Wash the cherry tomatoes under cold running water and drain in a colander. Cut them in half or quarters depending on their size (time: 2-3 minutes). Peel the red onion, cut it in half and slice it into very thin half-moons (time: 3-4 minutes). Squeeze the juice from the lemon into a small bowl (about 30 ml). Peel and finely chop the garlic (1-2 cloves) or use a garlic press (1-2 minutes).

Use a cutting board and a sharp vegetable knife. A small hand juicer will be useful for squeezing the lemon. If the onion is very pungent, after chopping, place it in a bowl of cold water for 5 minutes, then drain - it will lose some of its sharpness.

Avocado Pasta

Cut each avocado in half lengthwise, twist the halves and separate them. Remove the pit using a spoon or by gently hitting it with a knife and pulling it out (time: 1 minute). Scoop the flesh into a medium bowl with a spoon. Add 30 ml of lemon juice, 30 g of olive oil, chopped garlic, 2 g of salt, and 1 g of pepper. Use a fork (or a manual masher) and mash the ingredients until you achieve a creamy but slightly chunky consistency — work for about 1–2 minutes. If you prefer a smooth paste, blend briefly with an immersion blender for 10–15 seconds.

Use a large, stable bowl and a fork or wooden spoon. If you don't want the paste to become too runny, add the oil gradually. Check the taste and season with additional salt or pepper. If the avocados are unripe (hard), you won't be able to mash them into a cream — start with ripe fruits.

Preparation of toppings

If you are using red onion, you can briefly salt it now (a pinch) and squeeze out the excess moisture so it doesn't make the sandwiches soggy (time: 2–3 minutes). Mix the chopped cherry tomatoes with a little salt and a teaspoon of olive oil, set aside for 2–3 minutes to release some juice — then drain on a paper towel so the sandwiches are not too watery.

Use a paper towel to drain the tomatoes. Additionally, you can add feta or sprouts to enhance the flavor and texture (if using feta, sprinkle it on the sandwiches just before serving).

Bread preparation

Toast the bread: set the toaster to medium power and toast the slices until golden brown (about 2–3 minutes). If using an oven, preheat to 200°C and bake on a baking sheet lined with parchment paper for 6–8 minutes, until the edges are golden and crispy. Alternatively, heat a pan with a small amount of oil and fry the slices for 1.5–2 minutes on each side over medium heat.

The best option is a non-stick pan or a toaster. Be careful not to burn the bread — a golden color and firmness at the edges are signs that it is ready. The bread should be crispy on the outside but not too dry on the inside.

Sandwich Assembly

Spread approximately 50 g of avocado paste evenly on each toasted slice (400 g of avocado ÷ 8 slices = 50 g per slice). Use a spoon to spread the paste with the back of the spoon, creating a smooth layer. Evenly distribute the chopped cherry tomatoes and thin slices of onion on top. If you are using feta, sprinkle it now with finely crumbled feta (about 10 g of feta per slice). Lightly sprinkle with chili flakes if you want some heat. Drizzle everything gently with olive oil (a few drops).

Use a small teaspoon to apply the paste and a knife to spread it evenly. Do not add too many wet ingredients (e.g., fresh tomatoes without draining), as the moisture will make the bread soggy. Additionally, you can add sprouts just before serving for freshness.

Finishing and serving

Serve the sandwiches immediately — best on a large platter. Before serving, you can add a teaspoon of extra oil on top and a few leaves of fresh cilantro or parsley, if you like. Cut the sandwiches in half for easier eating during the party (time: 1–2 minutes).

Chill in the refrigerator for up to 24 hours. When ready to use, you can refresh it with lemon juice. Store toasted slices separately in a closed container for up to 24 hours, and before serving, toast them for 1–2 minutes to regain their crispness.
