Description

Creamy, slightly smoky black bean dip served inside a roasted pumpkin is an impressive appetizer perfect for Halloween. The dish combines the sweet-nutty flavor of pumpkin with a thick, slightly spicy and tangy bean paste, seasoned with smoked paprika and cumin. Serving it in pumpkin halves creates an edible "bowl" that looks incredibly decorative — the dark interior of the dip contrasts with the orange flesh and green herbs. This dish is suitable for autumn gatherings and can be served as a warm appetizer or as a main feature on the table alongside dark bread or garlic buttered slices. Visually appealing: the golden, slightly caramelized skin of the pumpkin, the black dip, and a sprinkle of pumpkin seeds and fresh cilantro.

Preparation steps

Preparing the pumpkin

1

Preheat the oven to 200°C (top-bottom). Wash the pumpkin, place it on a cutting board, and carefully cut it in half lengthwise with a large, heavy knife. Use a spoon to scoop out the seeds and fibers — save some seeds for roasting as a topping. If you like, cut the flesh from the halves into slices about 2–3 cm thick (if you want separate pieces), but we suggest keeping the halves as bowls and just lightly hollowing out a cavity for the filling.

Ingredients: Pumpkin
Use a wide cutting board and a heavy knife. Hold the pumpkin firmly with your hand in an oven mitt while cutting. Don't throw away the seeds — you can roast them in a dry pan.
2

Scoop the inside of the pumpkin half with 1 tablespoon of rapeseed oil and sprinkle evenly with 1 pinch of salt. Place the halves cut side up on a baking sheet lined with parchment paper. Bake in a preheated oven for 35–45 minutes — the flesh should be soft (check with a fork: the fork should go in easily and leave a mark), the skin lightly browned.

Ingredients: Pumpkin, Rapeseed oil, Salt
Use a baking tray with edges to catch any juices. If the pumpkin is large, the baking time may be extended by 10–15 minutes.

Bean pasta

3

In the meantime, drain the black beans in a sieve and rinse under running water. Dice the onion finely. In a 24–26 cm diameter skillet, heat 2 tablespoons of canola oil (30 g in total), add the onion, and sauté over medium heat for 4–5 minutes until it becomes translucent and soft. Reduce the heat, add the finely chopped garlic (2 cloves, 10 g), and sauté for 30–45 seconds — do not let the garlic brown (it will cause a bitter taste).

Ingredients: black beans, Onion, Rapeseed oil, Garlic
Use a wide non-stick skillet. The onion should be soft and translucent — this is a sign it's ready for the next ingredients.
4

Add smoked paprika (4 g) and cumin (2 g) to the sautéed onion. Stir for 30 seconds until the spices release their aroma. Add the drained black beans and 50 ml of water. Heat over medium heat for 2–3 minutes, stirring until everything is hot.

Ingredients: Smoked paprika, cumin, black beans, Water
A brief toasting of the spices brings out the depth of flavor. Be careful not to burn the paprika — it will become bitter.
5

Transfer the contents of the pan to a tall blending container or a large bowl. Add lemon juice (30 ml), 1 tablespoon of rapeseed oil (15 g), and a pinch of salt and a pinch of pepper. Blend into a smooth paste using an immersion blender or a food processor. If you prefer a rustic texture, use a potato masher and mash some of the grains — the paste should be creamy but not completely uniform. If the mixture is too thick, add a tablespoon of water at a time until you achieve the desired consistency.

Ingredients: black beans, Lemon juice, Rapeseed oil, Water, Salt, Black pepper
Use a food processor for a smooth texture, a masher if you prefer a chunkier paste. After blending, taste and season, as the flavors develop when cooled.

Assembly

6

When the pumpkin is baked and slightly cooled (5–10 minutes), gently scoop out some of the flesh from the halves with a spoon to create a cavity for the paste — save some of the flesh (about 100 g) to mix with the paste, this will add sweetness and a nice color. Mix the scooped-out flesh with the prepared paste, trying to season again with salt and lemon juice to taste.

Ingredients: Pumpkin, black beans, Lemon juice
If the pumpkin is very hot, set it aside for a moment. The flesh easily comes off with a spoon — there's no need to cut too deeply for the walls of the pumpkin to remain stable.
7

Fill the halves of the pumpkin with the filling up to just below the edge. Sprinkle the top with pumpkin seeds (optionally previously toasted in a dry pan for 3–4 minutes), add a few leaves of chopped cilantro, and optionally a few thin dollops of cream. Place the filled halves in an oven preheated to 180°C for 8–10 minutes just to combine the flavors and serve warm.

Ingredients: Pumpkin, Coriander, Sour cream, black beans
Use a small baking dish or a baking pan to keep the pumpkins stable. Do not bake for too long — excess heat can soften the walls of the pumpkin too much.

Serving

8

Serve on a large platter — the halves of the pumpkin as "bowls" next to slices of bread or crackers. When serving, add fresh cilantro and, if desired, an extra dollop of sour cream. Guests can scoop the spread with a spoon directly from the pumpkin or spread it on the bread.

Ingredients: Coriander, Sour cream
Serve immediately while the pasta is still slightly warm — the flavors are at their fullest then. You can add lime slices or a few mint leaves as a garnish.

Fun Fact

💡

Pumpkin was one of the first cultivated vegetables in North America and has long been used as an edible vessel — the tradition of stuffing vegetables is also known in Polish cuisine, especially in autumn.

Tips

🍽️ Serving

Serve on a wooden board or a black platter to highlight the Halloween contrast. Dark bread, crispy garlic croutons, or millet pancakes pair well with the spread. For a spicy version, add a teaspoon of hot chili sauce to the spread.

🥡 Storage

Store the paste separately in an airtight container in the refrigerator for up to 3 days. Store the roasted pumpkin in the refrigerator for up to 2 days. It's best to combine the paste with the pumpkin just before serving; for reheating, use the oven at 150°C for 8–10 minutes or the microwave on medium power for 1–2 minutes.
