Make sure all ingredients are well chilled. Remove the pickles from the jar and pour 100 ml of the brine into a separate container (it will be useful for seasoning). Set aside two pickles to be sliced for decoration. Lightly dry the remaining pickles with a paper towel.
Description
A refreshing, savory drink made from pickled cucumbers and buttermilk, with the addition of green pepper and dill - inspired by the summer flavors of Podlasie. It is a cooling and slightly tangy drink, with a characteristic pickled note and a fresh aroma of dill. Perfect as an aperitif for grilling, a complement to roasted duck or grilled dishes, as well as a thirst-quenching beverage during hot weather. Aesthetically served in glasses with a slice of fresh cucumber and a sprig of dill, it catches the eye with its green, rustic color. It combines the tradition of local fermented products with a simple, modern serving style.

Preparation steps
Preparation of ingredients
Mixing
Chopped pickled cucumbers (excluding those reserved for decoration) go into a blender. Add 600 ml of buttermilk and pour in 50 ml of the reserved brine (keep the rest for seasoning). Squeeze the juice from half a lemon (about 50 g) directly into the blender. Finely chop half a bunch of dill (about 15 g) and add it to the blender. Finally, add green pepper (about 8 g).
Blend on high speed for 30–45 seconds until the mixture is smooth, but not completely silky — we want a slightly grainy texture from the pickles. If your blender has a pulse function, use it for the first 10 seconds, then blend continuously. Check the consistency: the drink should be liquid, but slightly thick and creamy.
Seasoning
Pour the blended mixture into a large pitcher. Add 400 ml of mineral water and mix thoroughly with a wooden spoon. Taste the drink and if necessary, add a little salt (maximum 1 g of salt). If you want a milder flavor, add 20–50 ml of brine or more water to taste.
Chilling and serving
Before serving, chill the drink in the refrigerator for at least 20 minutes. Fill the glasses with ice (if using), pour the drink into 4 glasses, and garnish with a slice of fresh cucumber and a sprig of dill. You can also place 2–3 whole green peppercorns in each glass as a decoration and aromatic touch.
Variants
Podlasie variant: you can add 20–30 ml of pure vodka or apple cider vinegar to the portion for a more pronounced flavor (optional). For the vegan version, replace buttermilk with fermented plant-based kefir (less traditional, but gives a similar consistency).
Fun Fact
In Podlasie, sour, fermented dairy and vegetable drinks are popular; the combination of pickled cucumbers with buttermilk is a regional twist on the classic cucumber soup, served as a refreshing drink.

Tips
Serve very chilled in tall glasses, garnished with a slice of fresh cucumber and a sprig of dill. It pairs well with roasted duck, grilled pork, or as a refreshing accent between spicy dishes. If serving with alcohol, also offer a non-alcoholic version.
Store in a closed pitcher in the refrigerator for up to 48 hours. Before serving again, stir, as the drink may separate. Freezing is not recommended, as it will change the consistency of the buttermilk.
