Make sure all ingredients are well chilled. Remove the pickles from the jar and pour 100 ml of the brine into a separate container (it will be useful for seasoning). Set aside two pickles to be sliced for decoration. Lightly dry the remaining pickles with a paper towel.

Use a cutting board measuring approximately 30x20 cm and a sharp kitchen knife. Pour the brine into a measuring cup – this way you can easily control the saltiness of the drink.

Mixing

Chopped pickled cucumbers (excluding those reserved for decoration) go into a blender. Add 600 ml of buttermilk and pour in 50 ml of the reserved brine (keep the rest for seasoning). Squeeze the juice from half a lemon (about 50 g) directly into the blender. Finely chop half a bunch of dill (about 15 g) and add it to the blender. Finally, add green pepper (about 8 g).

Use a jug blender with a power of at least 500 W or an immersion blender in a tall container. Layer the ingredients: liquids at the bottom, then soft vegetables, and top with dill and pepper.

Blend on high speed for 30–45 seconds until the mixture is smooth, but not completely silky — we want a slightly grainy texture from the pickles. If your blender has a pulse function, use it for the first 10 seconds, then blend continuously. Check the consistency: the drink should be liquid, but slightly thick and creamy.

If you don't have a blender, finely chop the cucumbers and mix vigorously with the buttermilk using a whisk or hand mixer for 1–2 minutes.

Seasoning

Pour the blended mixture into a large pitcher. Add 400 ml of mineral water and mix thoroughly with a wooden spoon. Taste the drink and if necessary, add a little salt (maximum 1 g of salt). If you want a milder flavor, add 20–50 ml of brine or more water to taste.

Use a pitcher with a capacity of at least 1.2–1.5 l. Stir slowly to maintain the delicate structure and small bubbles if you are using sparkling water.

Chilling and serving

Before serving, chill the drink in the refrigerator for at least 20 minutes. Fill the glasses with ice (if using), pour the drink into 4 glasses, and garnish with a slice of fresh cucumber and a sprig of dill. You can also place 2–3 whole green peppercorns in each glass as a decoration and aromatic touch.

Use highball glasses or beer mugs. If serving on the grill, place the glasses on small coasters to prevent them from getting hot from the hot plates.

Variants

Podlasie variant: you can add 20–30 ml of pure vodka or apple cider vinegar to the portion for a more pronounced flavor (optional). For the vegan version, replace buttermilk with fermented plant-based kefir (less traditional, but gives a similar consistency).

If you are adding alcohol, inform your guests. Switching to a plant-based drink will change the flavor — adjust the amount of broth and lemon juice accordingly.
