Description

Delicate pumpkin truffles are an autumn, slightly spiced snack perfect for Halloween. The flesh of roasted pumpkin combines with creamy cheese, honey, and cocoa, while crunchy walnuts provide a contrast in texture. The truffles have a deep orange-cocoa color inside and are rolled in cocoa or sprinkled with nuts, creating an effect of an elegant, homemade sweet treat. Serve chilled as an appetizer at a Halloween party, alongside dried plums and hot spiced tea; they also look great arranged on black stone with fine sugar decorations. Qualities: creamy consistency, subtle sweetness of honey, and spicy notes of cinnamon, combined with crunchy nuts create a surprisingly sophisticated snack.

Preparation steps

Preparing the pumpkin

1

Preheat the oven to 200°C (top-bottom). Cut the pumpkin in half, scoop out the seeds with a spoon, and remove the tough fibers. If you are using hokkaido pumpkin, you can leave the skin on; if using butternut, peel it. Cut into pieces of similar size (about 3–4 cm). Arrange the pieces on a baking sheet lined with parchment paper, skin side down, sprinkle lightly with salt, and bake for 30–40 minutes, until the flesh is soft (check with a fork – it should go in easily).

Ingredients: Pumpkin, Salt
Use a large knife and cutting board. A baking sheet with a rim and parchment paper is best. Check the softness with a fork; if the fork slides easily into the flesh, the pumpkin is ready.
2

After baking, set the pieces of pumpkin aside for 10 minutes to cool. Then, use a spoon to scoop the flesh into a bowl. Blend with an immersion blender or mash with a potato masher/fork until a smooth puree forms. The machine should run for 30–60 seconds; the mixture must be uniform, without large fibers.

Ingredients: Pumpkin
If you don't have a blender, pass the pulp through a sieve. A smooth puree will make it easier to shape the truffles and prevent a fibrous texture.

Truffle dough

3

In a large bowl, combine the pumpkin puree, cottage cheese, and softened butter. Add honey and half of the cocoa (about 25 g), oats, cinnamon, and a pinch of salt. First, mix with a wooden spoon, then use a hand mixer on low speed for 20–30 seconds until the mixture becomes smooth and creamy. The mixture should be pliable, not runny – if it's too thin, add a spoonful of oats; if it's too thick, add a spoonful of honey.

Ingredients: Pumpkin, Cottage cheese, Butter, Honey, Cocoa, Oat flakes, Cinnamon, Salt
Use a large bowl and a hand mixer with a whisk attachment or a flat spatula. Mix briefly to avoid over-beating the cheese – the mixture should be creamy, not watery.
4

Chop half of the walnuts into large pieces (use a knife and cutting board). Add the chopped walnuts to the mixture and fold them in gently with a spatula – this will evenly distribute the crunchiness. Set aside a few larger pieces of walnut for decoration.

Chop the nuts on a cutting board. If you want a finer texture, you can pulse the nuts in a blender.

Cooling the mixture

5

Cover the bowl with plastic wrap and place the mixture in the refrigerator for 20–30 minutes. The chilled mixture will be easier to shape into balls. The mixture should firm up enough not to stick excessively to your hands.

Ingredients: Pumpkin, Cottage cheese, Honey
Use an airtight container or plastic wrap. Chilling makes shaping easier and improves the texture of the truffles.

Shaping and coating

6

Take the mixture out of the fridge. Scoop a portion of about 20 g of the mixture (don't weigh it – use a teaspoon as a measure) and shape it into a ball by rolling the mixture between your hands for 8–12 seconds. If the mixture sticks to your hands, dampen your hands with a little cold water. Place the shaped truffles on a baking sheet lined with parchment paper.

Ingredients: Pumpkin, Cottage cheese, Honey, Oat flakes, Cocoa
It's best to shape with one hand like a spoon, while gently rolling with the other. If the balls are too soft, place them in the fridge for 10–15 minutes before coating.
7

Prepare two bowls: in one, the remaining cocoa (about 25 g), in the other, chopped nuts or sesame (if using). Roll each truffle in the cocoa, gently shaking off the excess, and then in the nuts or sesame, if desired. Additionally: you can make a small indentation with a knife on top of the truffle and place a thin strip of orange peel as a "stem" – it creates a spooky Halloween effect.

Ingredients: Cocoa, Sesame
For coating, use two spoons: one for placing the truffle in the cocoa, the other for turning it. If you are using sesame, press it lightly into the mixture so it doesn't fall off.

Cooling and serving

8

Place the coated truffles in the refrigerator for at least 30 minutes to firm up and allow the flavors to meld. Before serving, take them out 10 minutes in advance so they are not too cold. Arrange on a black stone or platter, decorating with additional pieces of nuts and strips of orange peel for a Halloween effect.

Use the cool drawer of the refrigerator; do not keep the truffles out of the fridge for too long, as they will become soft. Serve slightly chilled.

Fun Fact

💡

Pumpkins have been used in the cuisine of Central Europe for centuries as an ingredient in sweet and savory dishes; in the 19th century in Poland, they began to be made into desserts and preserves, and today pumpkin appears in modern snacks like these truffles.
