Description

A colorful, fun pasta salad designed specifically for Halloween — light, crunchy, and full of contrasting flavors. It combines al dente fusilli pasta with seasonal red cabbage, carrots, and fresh cucumber, a creamy dressing made of mayonnaise and yogurt, and a decoration of "eyes" made from cheese and black olives. With its intense colors (purple, orange, green, and black), the dish looks impressive on the table and allows for the creation of neat "monster" shapes: mounds, manes, and scary smiles. Perfect for a Halloween party for both kids and adults — it can be prepared a day in advance and finished just before serving. Flavor qualities: creaminess of the dressing, light sweetness of the corn, acidity of the lemon, and freshness of the vegetables; visually — frightfully cute and very photogenic.

Preparation steps

Pasta

1

Prepare a large pot: fill it with 3 liters of cold water. Place it over high heat and bring to a boil. When the water starts to boil vigorously, add 8 g of salt (about 1 and a half teaspoons) — salting the water is an important step as it gives flavor to the pasta. Add 300 g of fusilli pasta, stir with a wooden spoon to prevent the strands from sticking to the bottom. Cook according to the time on the package, usually 8-10 minutes, but check from the 7th minute: the pasta should be al dente — soft but with a slight firmness in the center.

Ingredients: fusilli pasta, Salt
Use a large pot (at least 4 l) and a wooden spoon. If you don't have a scale, estimate the pasta visually: 300 g is about 3/4 of a standard 400 g package. Do not overcook the pasta — it will fall apart when stirring.
2

Drain the pasta in a colander and immediately rinse it under cold water for about 30 seconds — this will stop the cooking process and cool the pasta, making it easier to mix with the vegetables in the salad. After draining, transfer the pasta to a large bowl or wide dish and set aside to cool for about 5–10 minutes.

Ingredients: fusilli pasta
Use a stainless steel colander. Rinsing with cold water is key for salads (it prevents sticking). If you want the pasta to stay warmer, you can drain it and quickly toss it with a small amount of canola oil (not included in the basic recipe).

Vegetables

3

Prepare the vegetables: peel the carrot and grate it on a coarse grater or cut it into thin strips (julienne). Finely chop the red cabbage with a knife — keep the blade close to the board to cut it finely. Cut the cucumber in half lengthwise, scoop out the seeds with a spoon if they are watery, and then slice it into half-moons. Drain the corn in a sieve. Cut the cheese into small cubes (about 5 mm). Slice the olives, saving a few halves for the eyes.

Ingredients: Carrot, Red cabbage, Field cucumber, Canned corn, Cheese, black olive
Use a sharp knife and a stable cutting board. A small mold or metal tube (e.g., for cutting drops) will be helpful for cutting small circles of cheese for the "eye whites." If you don't have a grater, slice the carrot very thinly.

Dressing

4

In a separate bowl, prepare the dressing: combine 100 g of mayonnaise with 150 g of natural yogurt. Grate the zest of half a lemon (if you like an intense aroma) and squeeze the juice from that half (about 15–20 ml of juice). Add the lemon juice to the mixture, season with 2 g of black pepper and 2–3 g of salt (add gradually) and mix vigorously with a spoon until the dressing becomes smooth and uniform. Taste and adjust the acidity or salt to your preference.

Ingredients: Mayonnaise, Natural yogurt, Lemon, Black pepper, Salt
Use a small bowl for whisking and a whisk or fork. If the dressing is too thick, add 1–2 tablespoons of pasta cooking water (if you saved it) to thin it out. Don't add all the juice at once — it's better to season gradually.

Salad assembly

5

In a large bowl with cooled pasta, add carrot, red cabbage, cucumber, corn, and cheese cubes. Pour in the dressing and gently mix with a wide spatula or two spoons, lifting the ingredients from the bottom to the top — so as not to crush the carrot or mash the pasta. Taste and season with salt and pepper if needed. Finally, add finely chopped parsley and gently mix again.

Ingredients: fusilli pasta, Carrot, Red cabbage, Field cucumber, Canned corn, Cheese, Parsley, Mayonnaise, Natural yogurt
Use a large bowl (at least 3 l) and a wide spoon or spatula. Mix briefly and gently — the goal is to combine the ingredients, not to break them down. If the salad seems too dry, add 1–2 tablespoons of yogurt.

Cooling

6

Cover the bowl with plastic wrap or a lid and place it in the refrigerator for at least 20–30 minutes — chilling will allow the ingredients to meld together and make it easier to shape the monsters.

Ingredients: fusilli pasta, Mayonnaise, Natural yogurt
If you are preparing the salad a day in advance, store the dressing and solid ingredients separately, and mix them 30 minutes before serving. A chilled salad tastes more cohesive.

Assembly and decoration

7

Forming the monsters: on a large platter, place the salad in several small mounds (a portion for one 'monster' is about 100–120 g of salad). Use two spoons — one to scoop the salad, and the other to smooth the sides, creating oval or round shapes. For decoration: make 'eye whites' from small circles of yellow cheese, and use half a black olive as 'pupils'. Olive halves can also be used as teeth or holes in the smile. Shape 'hair' for the monsters from cabbage or carrots, and optionally sprinkle roasted pumpkin seeds on the 'skin'. Baked pieces of pumpkin can be arranged as sharp teeth in the monster's smile (optional). Sprinkle with parsley for contrast.

Ingredients: Cheese, black olive, Red cabbage, Carrot, Pumpkin, Parsley
Use a small mold or a metal tube (e.g., from a straw) to cut out small circles from the cheese. A pair of small kitchen tongs or a spoon can be helpful for arranging the details. Additionally, you can add pumpkin and pumpkin seeds to enhance the flavor and for decoration.

Serving and Tips

8

Serve the salad chilled on a large platter. Prepare small plates and serving spoons. You can add extra lemon slices next to the platter so guests can add a bit of fresh juice. If the salad will sit for more than an hour, keep it in the refrigerator.

Ingredients: Lemon, Parsley
Use a wide platter for presentation — it makes shaping figures easier. Avoid plastic decorations directly on the food; everything should be edible. If you add pumpkin seeds, toast them briefly in a dry pan for a more intense flavor.

Fun Fact

💡

In the 19th century in Poland, cold pasta salads were popular at parties as colorful side dishes; combining them with decoration is a modern play on form — perfect for Halloween when the appearance of the dishes becomes part of the attraction.

Tips

🍽️ Serving

Serve on a large platter, forming several smaller 'monsters' instead of one large one. Place a small dish with extra dressing alongside. When serving for children, prepare small tongs so they can add decorations themselves.

🥡 Storage

Store in an airtight container in the refrigerator for up to 48 hours. If the salad becomes dry, add a little yogurt or 1–2 tablespoons of pasta cooking water and gently mix. Do not freeze — the ingredients will lose their texture.
