Prepare the ingredients and utensils: take out the blue cheese and let it reach room temperature for 10–15 minutes (it will be easier to mash). Take a medium bowl (about 1 l) and a cutting board.

Use a wide, stable bowl and cutting board. If you are using a cheese knife, choose a sharp knife for cutting soft cheeses. Do not try to crush soft, very cold cheese - it will crumble.

Cut the cheese into smaller pieces and mash it with a fork in a bowl: slice the cheese into 1–2 cm pieces, then press it down with a fork against the bottom of the bowl until you see moist clumps and a creamy mixture. This will make it easier to combine with the base.

Use a fork or a manual spatula. If you want a smooth consistency, you can use an immersion blender later. Do not crush the cheese completely into a paste if you want to leave some texture.

Add 18% cream and natural yogurt: first pour in the cream, then the yogurt. Stir vigorously with a spoon or whisk for about 30–60 seconds until the mixture becomes smooth and creamy. If you want a lighter texture, add more yogurt by the tablespoon.

Resting

Chill the sauce in the refrigerator for at least 20–30 minutes (in a covered container) — the flavors will meld, and the sauce will thicken slightly. If you need to serve it immediately, you can skip the chilling, but the flavor will be sharper.

Cover the bowl with plastic wrap or transfer the sauce to an airtight container. Chilling will improve the consistency and harmonize the flavors.

Serve the sauce in a small bowl, sprinkle with finely chopped chives. Arrange crackers, toasted slices of whole grain bread, raw carrot sticks, and celery stalks or blanched young asparagus for 1–2 minutes alongside. Additionally, serve pieces of blue cheese on a plate for effect.
