Description
Vegetable oil is a transparent to golden liquid with a neutral or mildly nutty flavor, depending on the raw material; its consistency is usually light and fluid, with a sheen. From a nutritional standpoint, it mainly provides energy in the form of monounsaturated and polyunsaturated fats, often vitamin E and phytosterols, which support cardiovascular health with moderate consumption, although it is calorie-dense, so it should be used in moderation. In the kitchen, vegetable oil is versatile: it is suitable for frying, stewing, baking, as a base for sauces and dressings, and for marinades, with different types working well at different temperatures. It should be stored tightly closed in a cool, dark place, away from heat sources and strong odors; some oils (e.g., flaxseed oil) require refrigeration.
