Preparation steps

Preparing mirabelle plums

Preheat the oven to 200°C with convection (if using a grill, prepare a medium-hot grill). Wash the mirabelle plums under cool water and dry them with a paper towel. Cut each mirabelle in half and remove the pit. In a large bowl, gently mix the mirabelle halves with 10 g of honey (about 1/3 of the total amount of honey) and 5 g of olive oil (about 1/3 tablespoon) so that the fruits caramelize slightly during baking. Place the halves cut side down on a baking sheet lined with parchment paper, leaving small gaps between them.

Use a baking tray measuring about 30x20 cm and parchment paper. If the mirabelle plums are very ripe, shorten the baking time. Do not place the halves too close together — the bottom should brown quickly.

Place the tray in the preheated oven and bake for 10–12 minutes at 200°C, until the edges start to caramelize and the mirabelle plums are soft but still hold their shape. If grilling, bake for 6–8 minutes skin side down and watch carefully to avoid burning. After baking, carefully remove the tray and let the mirabelle plums cool for 5 minutes — they will be firmer for arranging on the salad.

Check the color every 3–4 minutes — they should take on a light brown color at the edges. Use a wide spatula to remove them so that the halves do not fall apart.

Sauce (vinaigrette)

In a small bowl, combine 20 g of honey (the rest), 20 g of lemon juice, and 20 g of grated horseradish. Add 10 g of mustard and 1 g of salt and 1 g of pepper. Whisk vigorously until the ingredients are combined. Then, while continuing to whisk, slowly drizzle in 30 g of olive oil in a thin stream to achieve a smooth, slightly thick emulsified dressing. The dressing should have a sweet-spicy balance and a slightly fluid consistency — if it is too thick, add 5–10 ml of water or lemon juice.

Use a small metal or ceramic bowl and a whisk. If you have a jar with a lid, you can put the ingredients in and shake vigorously (alternative method). Remember to pour the oil slowly — this helps achieve a stable emulsion.

In the meantime, crumble the goat cheese with a fork into smaller pieces or break it apart with your fingers. If you are using walnuts, toast them in a dry pan for 2–3 minutes over medium heat, shaking the pan every 20–30 seconds until they start to smell fragrant and lightly brown. Be careful not to burn them. Wash the arugula and dry it very thoroughly in a salad spinner or lay it out on a paper towel and gently pat dry.

For crumbling cheese, use a fork or your hands. For toasting nuts, a non-stick pan with a diameter of 24–28 cm is best. If you don't have a salad spinner, dry the lettuce with paper towels so the dressing doesn't make the salad soggy.

Salad Assembly

Transfer the arugula to a large bowl (preferably wooden or stainless steel). Drizzle 2/3 of the prepared vinaigrette (about 40–50 g) and gently toss the arugula with your hands or silicone tongs, vigorously but briefly — for 10–15 seconds, so the leaves are lightly coated with the dressing and not crushed. Arrange the arugula on plates or a large serving platter, placing the halved roasted mirabelles cut side down in an aesthetically pleasing cluster, sprinkle with crumbled goat cheese and toasted walnuts (if using). Finish the dish with freshly ground pepper and possibly a very light drizzle of olive oil.

Use a large wooden or plastic spoon/tongs to mix the salad. Do not add all the dressing at once — it's easier to season by adding it gradually. Arrange the ingredients on plates just before serving to prevent the arugula from wilting.

Taste the salad and season with additional salt or lemon juice if needed. If you prefer a sweeter effect, you can gently drizzle a few drops of honey over the mirabelles. Serve immediately after preparation to maintain the freshness of the arugula and the contrast of temperatures (warm mirabelles on cold lettuce).

It's best to eat the salad right away. Storage: store the arugula separately (dry and in an airtight container) and the dressing in a jar in the fridge for up to 3 days. Store the roasted mirabelle plums in a closed container for up to 24 hours and briefly reheat at 180°C (5–6 minutes) before adding to the salad.
