Refreshing summer cocktail combining the sweetness of watermelon with the aroma of strawberries and the tartness of lime. This is a Polish-modern proposal for a hot afternoon — light, naturally sweetened with honey, with the option to add yogurt for creaminess or sparkling water for a fizzy effect. The cocktail is visually striking (intense pink-red color) and is perfect as a drink for a picnic, barbecue, or afternoon tea. Serve chilled in tall glasses with a mint leaf as a decoration.

Wash the strawberries under running cold water and drain them in a colander. Remove the stems: hold the strawberry with your thumb and index finger and twist, or use a knife to remove the green part. Cut the watermelon in half, then scoop out the flesh with a knife into large cubes (without the skin and the white part between the skin and the flesh). Weigh about 600 g of watermelon flesh.

Use a large cutting board and a sharp knife. If the watermelon has a lot of seeds, you can remove them with a spoon or use a strainer while blending. The board should be stable — place a damp towel underneath it to prevent slipping.

Cut the lime in half and squeeze the juice into a small bowl. Check for seeds and remove them. Measure out the honey (30 g) and prepare the ice — if you are using cubes, you can lightly crush them in a cloth to make them easier to blend.

Use a manual citrus juicer or a fork to extract as much juice as possible. If the juice seems too sour, you can add more honey in the next step.

Mixing

In the blender jug, first add the pieces of watermelon (this will make blending easier), then the strawberries, add lime juice and honey. If you want a creamy consistency, add natural yogurt (optional). Close the blender and blend on high speed for 45–60 seconds until the mixture is smooth and uniform. Halfway through blending, stop the blender and use a spatula to scrape the mixture from the sides of the jug to ensure everything is evenly blended.

Use a jug or hand blender with a minimum power of 600 W. If the blender is weaker, blend for a shorter time in several short bursts, rather than continuously, to avoid overheating the motor. Blending time depends on the power — the mixture should be smooth, without large pieces of fruit.

Seasoning and consistency

Try the cocktail with a spoon. If it's too thick, add sparkling water (optional) or cold water to achieve the desired consistency — usually 50–100 ml is enough for 2 servings. If it's not sweet enough, add 5–10 g of honey and mix again with short pulses.

Add sparkling water just before serving to maintain the fizz. If you are adding more honey, remember that honey dissolves better in warmer liquid — it's good to first fully dissolve the honey in hot lime juice, but here, thorough blending is sufficient.

Serving

Strain the cocktail through a sieve into tall, chilled glasses if you want to get rid of small seeds or fibers. Garnish the top with fresh mint (optional) and serve with a thick straw. Serve immediately to keep the drink cold and refreshing.

Use a sieve with holes of 2–3 mm if you want a very smooth consistency. The best are tall glasses with a capacity of 300–400 ml. Do not prepare the cocktail too early — watermelon quickly loses its freshness and aroma.

🍽️ Serving

Serve the cocktail very cold in tall glasses. For children, omit the honey or use a riper watermelon. For adults, you can add a splash of vodka or vermouth to create a cocktail version.

🥡 Storage

The cocktail is best consumed immediately. Storing it in the fridge for up to 12 hours is possible in a tightly sealed container, but the flavor and intensity of the fruits will weaken. Do not freeze the drink after adding sparkling water; if you want to store it, leave out the sparkling water and add it just before serving.
