Wash the spinach thoroughly under running cold water. Transfer to a colander and shake to remove excess water. If the leaves are large, tear off the tough stems with your fingers.

Use a colander or sieve and a kitchen towel to drain. Too wet spinach will dilute the smoothie — if the leaves are very wet, gently pat them dry with a towel.

Wash the cucumber and, if the skin is bitter or waxed, peel it thinly. Cut into thick slices about 2 cm long, so it blends more easily in the blender. Wash the apple, remove the core, and cut it into quarters; leave the skin on.

Use a sharp knife and a cutting board. You don't need to peel the apple - the skin provides fiber. If you're using a countertop blender, cucumber slices and apple pieces will allow for even blending.

Peel the banana and slice it. Peel the ginger thinly with a spoon and cut it into thin pieces (or grate it on a fine grater) so that it distributes evenly in the smoothie. If you are using flaxseed, you can grind it now in a coffee grinder for better absorption.

Use a small grater or knife. Grinding the seeds improves the absorption of omega-3 acids. If you want a cooler smoothie, use a frozen banana.

Place in the blender in the following order: buttermilk (250 ml), first spinach, then cucumber, apple, banana, and ginger. Add lemon juice (about 15 ml). If you want to sweeten, add honey (15 g). Finally, add flaxseed (15 g) if you are using it.

Use a blender with a power of at least 600 W; a jug or hand blender with high speed works best. Arranging the ingredients in this order (liquid at the bottom) helps the rotor blend without dry 'pockets'.

Close the blender and blend on low speed for 10-15 seconds to break up larger pieces, then switch to high speed and blend for 30-45 seconds until the smoothie is smooth and creamy. If the consistency is too thick, add 1-2 tablespoons (15-30 ml) of water or more buttermilk; if too thin, add a few ice cubes or a piece of banana.

Watch the consistency through the opening in the lid (if the blender has one). The smoothie is ready when there are no visible pieces of fruit and it has a uniform, creamy texture. Do not blend for more than 90 seconds, as you will heat the smoothie and lose some of its freshness.

Pour the cocktail into two tall glasses through a strainer if you want to remove larger fibers. Garnish with a slice of cucumber, a mint leaf, or a sprinkle of ground flaxseed on top. Serve immediately chilled.
