Wash the cucumber and, if the skin is bitter or waxed, peel it thinly. Cut into thick slices about 2 cm long, so it blends more easily in the blender. Wash the apple, remove the core, and cut it into quarters; leave the skin on.
Peel the banana and slice it. Peel the ginger thinly with a spoon and cut it into thin pieces (or grate it on a fine grater) so that it distributes evenly in the smoothie. If you are using flaxseed, you can grind it now in a coffee grinder for better absorption.
Mixing
Place in the blender in the following order: buttermilk (250 ml), first spinach, then cucumber, apple, banana, and ginger. Add lemon juice (about 15 ml). If you want to sweeten, add honey (15 g). Finally, add flaxseed (15 g) if you are using it.
Close the blender and blend on low speed for 10-15 seconds to break up larger pieces, then switch to high speed and blend for 30-45 seconds until the smoothie is smooth and creamy. If the consistency is too thick, add 1-2 tablespoons (15-30 ml) of water or more buttermilk; if too thin, add a few ice cubes or a piece of banana.
Serving
Pour the cocktail into two tall glasses through a strainer if you want to remove larger fibers. Garnish with a slice of cucumber, a mint leaf, or a sprinkle of ground flaxseed on top. Serve immediately chilled.
