Wash the cucumber, radishes, and chives under cold running water. Dry with a paper towel. Cut the cucumber in half lengthwise, then slice it into thin pieces about 4-5 mm thick. If the cucumber is very watery, lay the slices on a paper towel, sprinkle with a little salt (about 1 pinch), and let sit for 5 minutes, then drain excess moisture with a paper towel.
Description
A light and colorful appetizer perfect for the Easter table — small skewers with thinly wrapped ham, a cube of cheese, a slice of cucumber, and a slice of radish. The dish combines classic Polish ingredients with a spring touch of fresh chives; it looks impressive on a platter and is convenient to eat during family gatherings. The skewers have a contrast of textures: soft ham, firm cheese, and crunchy cucumber and radish; the flavor is enhanced by a pinch of salt and pepper, and optionally added mustard or a slice of sorrel gives a slightly spicy and tangy twist. Serve cold as a snack before hot dishes or as part of an Easter buffet. Preparation is quick, and each step is described so that even beginners can manage.

Preparation steps
Preparation of ingredients
Slice the radishes into thin slices (3-4 mm). Finely chop the chives into 3-4 mm pieces. Cut the cheese into small cubes of about 20 g each (approximately 1.5-2 cm cubes). If the cheese is from a block, trim a straight edge, then cut into equal strips and cubes.
Lay the slices of ham individually on a board and if they are too large, trim them with a knife into rectangles about 10-12 cm long and 4-5 cm wide — this size will allow you to wrap a cube of cheese and a slice of cucumber. Set each trimmed slice aside on a plate.
Assembly
Take a single rectangle of ham, place a cube of cheese in the center, and put a slice of cucumber on top of the cheese cube. Roll the ham so that the cheese and cucumber are hidden inside the roll. Gently tuck the end of the ham under the bottom of the roll to keep it from unraveling.
Thread the prepared roll onto a skewer through the middle so that the skewer goes through the ham and the cheese cube. On the skewer, slide on a slice of radish (for color and spiciness), then optionally a bunch of chopped chives or a folded blade (gently), so that everything is stable. Repeat the process for all the skewers.
Decoration and serving
Arrange the skewers on a platter at even intervals. Lightly sprinkle each skewer with freshly ground pepper (a small pinch for a few pieces) and a bit of chopped chives. If you like, decorate the plate with a few leaves of sorrel (optional) for a tangy accent.
Taste and adjust seasoning if necessary: if the cucumber or radish were not very intense, serve a small bowl of mustard (optional) or a pinch of salt alongside. Serve the skewers chilled (from the fridge about 10-15 minutes before serving) — this is when they are the most crisp and fresh.
Fun Fact
Small skewers and canapés were popular at European courts as early as the 19th century — these short snacks made serving easier during standing receptions; in Poland, canapés often appear as part of the holiday table due to their convenience and the ability to combine meats with cheeses and seasonal vegetables.

Tips
Serve the skewers on a large white platter with fresh sorrel leaves and a bowl of mustard on the side. Arrange the skewers in several rows or in a circle to create a visual effect. You can also prepare a few variations: with pickled cucumber instead of fresh or with an olive instead of radish.
Store the skewers in an airtight container in the refrigerator for up to 24 hours. If you want to prepare them in advance, do not add the sticks and do not salt them — store the ingredients separately (ham, cheese, vegetables) and assemble just before serving. Do not freeze the finished skewers (the vegetables will lose their texture).
