Meat dough
Squeeze the soaked bread to remove excess milk (leave the moist interior), and transfer it to a large bowl. Add the ground pork, egg, 150 g of chopped onion (half of the prepared amount), 2 cloves of garlic (10 g) finely chopped, 6 g of salt, and 2 g of pepper. Mix the ingredients evenly with your hands for about 2–3 minutes, until the mixture is homogeneous and slightly sticky.
Shaping the patties
Form patties weighing about 150 g each (you should get 4 pieces). First, wet your hands with cold water, take a portion of the mixture, form a ball, and gently flatten it to a thickness of 1.5–2 cm. Place the patties on a board or plate. If the mixture is very sticky, wet your hands again or set the mixture aside in the fridge for 10 minutes.
Preparation for frying
On a plate, spread the flour. Gently coat each cutlet on both sides in the flour — shake off the excess. Heat a pan (preferably 26–28 cm) with 30 g of rapeseed oil over medium heat: the oil is ready when it starts to shimmer gently, but does not smoke.
Frying the cutlets
Place the cutlets in a pan with heated oil over medium heat. Fry for 4–5 minutes on one side until a golden-brown crust forms, then flip and fry for another 4–5 minutes. Once cooked, set the cutlets on a plate lined with paper towels to drain excess fat. Check by cutting into one cutlet: the center should be cooked, a pink center is acceptable in thin cutlets; if necessary, fry for a shorter or longer time.
Grilling tomatoes (sauce)
Preheat the electric grill, grill pan, or light the barbecue. Halved tomatoes drizzle lightly with oil, sprinkle a little salt (2 g of salt distributed). Grill skin side down for 4–6 minutes, until the skin is browned and starts to crack. Turn and grill for another 2–3 minutes, until the tomatoes are soft and slightly charred at the edges.
Preparing the sauce
In a medium skillet, heat 1 tablespoon of oil (15 g). Add the remaining 150 g of finely chopped onion and sauté for 4–5 minutes until translucent — it should become semi-transparent. Add 1 clove of garlic (5 g), minced, and sauté for 30 seconds. Add the grilled tomatoes (transfer them to a bowl; if they have skin, you can lightly peel it off or leave it), crush with a wooden spoon into pieces, add 10 g of sugar, and season with salt and pepper to taste. Simmer on low heat for 8–10 minutes until the sauce thickens.
Finishing the sauce
When the sauce thickens, remove the pan from the heat and, if using, add 20 g of cold butter and stir until it melts — you will achieve a velvety shine. Add 10 g of freshly chopped marjoram to the sauce, mix, and taste; season with salt or sugar if needed.
Assembly and serving
On the plates, place one cutlet (or two if smaller) and drizzle with 2–3 tablespoons of hot sauce made from grilled tomatoes. Sprinkle with fresh, finely chopped marjoram (the remaining part) and, optionally, decorate with basil leaves. Serve immediately with mashed potatoes, pearl barley, or a fresh cucumber and radish salad.
Cleaning and final tips
After finishing, clean your workspace: wash the cutting board, knife, and dishes. If you are making the cutlets in advance, keep them covered in the fridge for up to 24 hours and fry them just before serving to maintain their crispiness.
