Description

Creamy, baked "potato monsters" are a fun, autumn version of potato casserole perfect for Halloween. A mixture of soft, mashed potatoes with cream, egg, and grated cheese is shaped into monster-like forms, decorated with olives and crispy bacon (optional). The dish combines the mild sweetness of potato, the umami of cheese, and aromatic marjoram, while the baked crust takes on a golden-brown color. Serve hot straight from the oven, preferably with sauerkraut or an autumn apple salad; great as a main dish for a Halloween party — impressive, filling, and easy to prepare in larger quantities.

Preparation steps

Preparation

1

Peel the potatoes and cut them into even pieces about 2-3 cm. Transfer to a large pot and cover with cold water so that the water covers the potatoes by about 2 cm. Add half of the salt (2.5 g). Place the pot over medium heat and bring to a boil, then reduce the heat and cook for 18-22 minutes until the potatoes are soft — check with a fork: the fork should easily go into the potato.

Ingredients: Salt
Use a large pot with a thick bottom to ensure the potatoes cook evenly. Cold water and gradual heating prevent the outer parts from becoming mushy while the center remains hard.

Filling

2

In the meantime, peel and finely chop the onion and garlic. Heat rapeseed oil in a pan, add the onion, and sauté over medium heat for 5–7 minutes until it becomes translucent and slightly golden. Add the garlic and sauté for another 30–40 seconds until fragrant — do not burn the garlic.

Ingredients: Onion, Garlic, Rapeseed oil
Use a pan with a diameter of 24–28 cm. If the onion starts to stick, reduce the heat and add a little water. Add the garlic at the end so it doesn't become bitter.
3

Drain the cooked potatoes thoroughly in a colander and set aside for a minute to steam off. Transfer to a large bowl or pot. Add the butter and start mashing the potatoes with a masher — mash until smooth, but not completely mushy (you can leave a few small lumps for texture).

Ingredients: Butter
Use a potato masher or ricer. If you have a potato ricer, the mixture will be fluffier. Do not mix with a hand mixer for too long (it will become a sticky mass).
4

To the warm potatoes, add the sautéed onion with garlic, sour cream, beaten egg, grated cheese (leave about 150 g for later), as well as marjoram, salt, and pepper to taste. Mix with a wooden spoon or silicone spatula until the ingredients combine into a cohesive mass that can easily be shaped into balls.

Ingredients: Onion, Garlic, Sour cream, Cheese, Marjoram, Salt, Black pepper
If the mixture is too loose, add a bit more grated cheese; if it's too dry, add a tablespoon of sour cream. Use a large spoon or kitchen glove when mixing, the mixture will be warm.

Shaping

5

Preheat the oven to 200°C (fan 180°C). Line a large baking tray with parchment paper. Wet your hands with water (to prevent sticking) and scoop portions of the mixture the size of a golf ball — shape them into oval or whimsical monster shapes: elongated heads, humps, fingers, etc. Place the monsters on the tray with about 2–3 cm spacing between them.

Ingredients: Cheese
Use an ice cream scoop for portioning, and slightly damp hands will make shaping easier. If the mixture is very sticky, moisten your hands with oil instead of water.
6

Give the monsters faces: press olive slices in as eyes or make cuts with a knife for 'teeth'. If you're using bacon — fry it in a pan until crispy, drain on paper towels, and place strips on top of the monsters as 'teeth' or 'scales'. Sprinkle the top with the remaining grated cheese (about 50 g).

Ingredients: olive, Smoked bacon, Cheese
To slice the olives, use a small knife or a peeler to get even slices. Place the bacon on the monsters only after frying and draining, otherwise the monsters will get soggy.

Baking

7

Place the tray in the preheated oven and bake for 20–25 minutes at 200°C (top-bottom) until the tops of the monsters turn golden and the cheese melts and lightly browns. Rotate the tray halfway through the time if the oven has noticeably hotter spots.

Ingredients: Cheese
Use the middle rack in the oven. If you want a stronger crust, turn on the grill for the last 1–2 minutes, but be careful not to burn the cheese.

Decoration and serving

8

Remove the monsters from the oven and wait 3–4 minutes. For a 'bloody' effect, you can drizzle a little ketchup or tomato sauce into the cuts as 'blood'. Serve on a large board or plate, garnished with extra olives or chives.

Ingredients: olive
Do not serve the monsters right away — the hot cheese can burn. Use a wide flat spatula when removing from the tray to avoid ruining the shapes.
9

Serve the monsters hot as a main dish for Halloween. You can serve them with a simple coleslaw made of sauerkraut and apple slices, or with roasted root vegetables — they contrast in flavor and visually.

If you are preparing for children, skip the spicy additions and use roasted pumpkin seeds instead of bacon as a crunchy decoration.

Fun Fact

💡

Potatoes arrived in Europe from America in the 16th century and quickly became a staple of the diet. In Poland, potato dishes gained immense popularity and became part of the traditional regional cuisine, making the Halloween twist with potatoes both fun and rooted in local culinary history.

Tips

🍽️ Serving

Serve the monsters on large platters; let guests choose their toppings (ketchup, sour cream, sauerkraut). A lightly chilled apple compote or dark beer pairs well to drink. For a party, prepare a double portion — the dish works great in larger quantities.

🥡 Storage

Store in an airtight container in the fridge for up to 2 days. To reheat, place the bites on a baking sheet and bake at 180°C for 8–10 minutes until the cheese melts and lightly browns — avoid the microwave, as the mixture will become rubbery.
