Preparation steps
Cake
Rub the butter into the flour with your fingers or use a pastry cutter until the mixture resembles coarse crumbs (the size of the crumbs should be similar to coarse sand). Keep small pieces of butter — this will give a layered texture after baking.
Add very cold water by the tablespoon and quickly mix with a fork or spatula until the dough starts to come together. Gather the mixture into a ball, do not knead for long — just combine until there are no dry bits of flour.
Flatten the ball of dough into a disk about 2–3 cm thick, wrap in plastic wrap, and chill in the refrigerator for at least 30 minutes (up to 2 hours). Chilled dough is easier to roll out and will hold its shape during baking.
Filling
In the meantime, prepare the filling. Peel and finely chop the onion. Heat 1 tablespoon of rapeseed oil in a pan and sauté the onion over medium heat for 6–8 minutes until it becomes soft and translucent, but not golden. Add the chopped garlic and sauté for 30–40 seconds until fragrant.
In a bowl, combine the cottage cheese with 2/3 of the grated cheese, sautéed onion with garlic, 1/2 teaspoon of salt, and freshly ground pepper (about 2 pinches). Mix vigorously with a fork until the mixture is creamy and smooth.
Grilling
Wash the tomatoes, cut them in half (or into quarters if they are large). Drizzle with canola oil and sprinkle with a little salt. Preheat the grill or grill pan over medium-high heat. Grill the tomatoes skin side down for 3–4 minutes, until slightly charred; turn to the other side and grill for another 2–3 minutes, until they soften and slightly shrink.
Basil sauce
Prepare the sauce: tear the basil leaves from the stems and wash them. In a blender, blend the basil with the cream, 1 clove of garlic (optionally crushed), a pinch of salt and pepper. If you want, add the juice of half a lemon (optional) for a brighter flavor. Blend briefly until the sauce is uniform, light green, and slightly creamy.
Assembly
Preheat the oven to 200°C (top-bottom). Take the dough out of the fridge and roll it out on a lightly floured surface into a circle about 30–32 cm in diameter. Transfer the dough to baking paper and place the cheese mixture in the center, leaving about a 4–5 cm edge free.
Arrange the grilled tomatoes on top of the cheese mixture, with the part containing juice — spread evenly. Fold the edges of the dough towards the center, creating a rustic wave. If you are using an egg, beat it and brush the edges for a nice golden color.
Baking
Place the tart in the preheated oven and bake for 30–35 minutes at 200°C, until the edges are golden and the cheese is lightly browned. After 20 minutes, you can gently cover the edges with foil if they are browning too quickly.
Finishing
Remove the tart from the oven and let it rest for 8–10 minutes to allow the juices to settle slightly. Before serving, drizzle the tart with basil sauce or serve the sauce separately. Cut into 6–8 pieces and serve warm or at room temperature.

Rustic tarts (galette) come from the rural cuisine of France, but in Poland, they can be easily adapted using seasonal tomatoes and cottage cheese — simplicity and quality of ingredients are key here.
