Check if you are using fresh pumpkin or ready-made puree. If you are using fresh pumpkin: preheat the oven to 200°C (180°C with fan). Wash the pumpkin, cut off the stem and top, and cut it in half. Remove the seeds and fibers with a spoon. If it's hokkaido pumpkin, you don't need to peel the skin; otherwise, peel it with a peeler and cut the flesh into cubes about 2–3 cm.
Description
Creamy pumpkin smoothie with cinnamon is an autumn, slightly spicy drink with a velvety texture and pleasant sweetness. It is based on roasted or ready-made pumpkin puree, to which we add banana for natural sweetness, yogurt and milk for smoothness, as well as honey and lemon juice to balance the flavor. Cinnamon enhances the aroma of pumpkin, and optional fresh ginger adds a spicy touch. Served on Halloween with a cinnamon stick and roasted pumpkin seeds, it makes a stunning, seasonal drink — great as a dessert, snack, or warming breakfast. The recipe includes an alternative for quick preparation with pumpkin puree and suggestions for thickening and garnishes.

Preparation steps
Preparing the pumpkin
Spread the pumpkin pieces on a baking sheet lined with parchment paper in a single layer. Drizzle with 15 g of rapeseed oil and sprinkle with a very light pinch of salt (1 g). Bake for 30–40 minutes, until the pieces are soft when pierced with a fork and there is a slight caramelization on the edges. Remove from the oven and set aside to cool. Measure 300 g of the baked flesh, mash with a fork or blend until smooth — this will be the pumpkin puree for the smoothie.
Preparation of ingredients
Prepare the remaining ingredients: peel and cut the banana into pieces, measure 250 g of natural yogurt and 100 ml of milk, measure 30 g of honey, 4 g of cinnamon (2 teaspoons), and 20 ml of lemon juice. If using, grate 5 g of fresh ginger on a fine grater and measure 30 g of oats. Place everything next to the blender.
Blending
Pour the milk (100 ml) and yogurt (250 g) into the blender first — the liquids will make blending easier, then add 300 g of pumpkin puree, banana pieces, 30 g of honey, 4 g of cinnamon, 20 ml of lemon juice, and a pinch of salt (1 g). If you are using ginger or oats, add them now. Blend on high speed for 30–60 seconds until the mixture is smooth and uniform. If the smoothie is too thick, add 15–30 ml of milk until you reach the desired consistency.
Serving
Pour the smoothie into chilled glasses. Sprinkle a little cinnamon on top. For a Halloween effect, you can place a cinnamon stick or a few roasted pumpkin seeds in each glass (optional). Serve immediately — the smoothie tastes best cold and fresh.
Storage
If you prepare more than you drink right away, store the smoothie in a tightly sealed jar in the fridge for up to 24 hours (maximum 48 hours). Before serving again, shake vigorously or stir with a spoon — the ingredients may separate.
Fun Fact
Pumpkin was used by Native Americans not only as food but also as a container for storage and cooking. The spiced duo of pumpkin and cinnamon became popular in the early 20th century with the development of pumpkin desserts and drinks in North American cuisine.

Tips
Serve in chilled glasses, garnish with a cinnamon stick, toasted pumpkin seeds, and a thin slice of dried orange for contrast. For a more impressive presentation for Halloween, use black straws and serve with a small hollowed-out mini pumpkin as a bowl for the seeds.
Store in the refrigerator in an airtight jar for up to 24 hours. Before serving, shake or stir well. Long-term storage is not recommended — over time, the texture and flavor change. Pumpkin puree can be frozen in portions for up to 3 months.
