Preparation steps

Filling

Drain the tuna: open the can and transfer the contents to a strainer set over a bowl. Gently press with a spoon to remove excess liquid. Transfer the drained tuna to a large bowl and flake it with a fork into smaller pieces — the goal is to achieve a finely crumbled texture, but not mushy.

Ingredients: canned tuna
Use a sieve with holes of about 2–3 mm and a large bowl. Well-drained tuna gives a better consistency to the filling and won't make the tortilla soggy.

Prepare the vegetables: peel the red onion and chop it into very small cubes (about 3–4 mm). Clean the pepper from seeds and chop it into small cubes of a similar size. Add the chopped vegetables to the bowl with tuna.

Use a sharp kitchen knife and a cutting board. Small, even pieces evenly distribute flavor and crunch in every serving.

Season the filling: add mayonnaise (30 g), smoked paprika (2 g), salt (1 g to start), and black pepper (0.5 g) to the mixture. Mix thoroughly with a fork. Taste and adjust salt if necessary (up to an additional 1 g).

Use a fork or a small spatula. Add the spices gradually, as it's better to add salt than to over-salt.

Yogurt sauce

Prepare the yogurt salsa: place natural yogurt (100 g) in a small bowl. Add the juice of half a lime (about 35 g), pressed garlic (10 g total pressed), and a tablespoon of rapeseed oil (15 g). Mix vigorously with a spoon until the mixture becomes smooth. Season with 1 g of salt and a pinch of pepper.

Use a spoon to stir and check the taste — the salsa should be slightly tangy and creamy. If it is too thick, add a little water or extra lime juice.

Sautéing

Quickly sauté the vegetables (optional): heat a large skillet over medium heat for 1–2 minutes. Add a tablespoon of oil (15 g). Toss in the chopped bell pepper and sauté for 3–4 minutes until the pepper is slightly softened but still crunchy. You can add the onion at the end for 1–2 minutes until it becomes translucent. Set aside to cool.

Use a pan with a diameter of 24–28 cm. Do not fry for too long — the vegetables should be juicy, not mushy.

Assembly

Heating the tortillas: heat a dry skillet over medium heat (without fat). Place the tortilla on the dry skillet for 20–30 seconds on each side until it becomes soft and slightly golden. Keep the tortillas covered with a clean cloth to keep them soft. Repeat for all the tortillas.

Use a non-stick pan. Heating for a few seconds on each side makes the tortillas easier to fold and prevents them from cracking.

Filling the taco: place 30–35 g of tuna filling (use a tablespoon) in the center of the tortilla, add a teaspoon of yogurt salsa (about 15 g) and a few pieces of sautéed bell pepper with onion. If using avocado, add 1–2 slices (about 40 g) or a tablespoon of mashed avocado. Sprinkle with fresh cilantro (optional). Fold the tortilla in half or serve it open.

Serving: arrange the tacos on a flat plate in a row or fan shape. Serve with a few lime wedges for squeezing and extra salsa in a bowl. Serve immediately to keep the tortillas warm and crispy at the edges.
