Preparation steps
Pesto
In a blender or food processor, place the basil leaves, garlic cloves (peeled), lemon zest, optional walnuts, and salt (1/2 teaspoon). Pulse while gradually adding olive oil — first 2 tablespoons, then the rest. The consistency should be thick but fluid, easy to mix with the pasta.
Taste the pesto and season with salt and pepper to your liking. If the mixture is too thick, add 1-2 tablespoons of pasta cooking water later to achieve a creamy consistency.
Grilled vegetables
Wash the vegetables. Cut the zucchini into diagonal slices about 5 mm thick, the eggplant into slices about 7 mm thick (you can lightly salt it and wait 10 minutes to remove bitterness, then dry with a towel), cut the bell pepper into quarters and remove the seeds, slice the onion into 5 mm thick rings, and cut the tomatoes in half or leave them whole if using cherry tomatoes.
Preheat the outdoor grill or grill pan over medium-high heat (it should be very hot before placing the vegetables). Brush the vegetables with olive oil on both sides (use a brush) and lightly sprinkle with salt. Arrange the vegetables in batches, do not overcrowd the grill.
Grill the zucchini and eggplant for 3-4 minutes on each side until dark stripes appear and the flesh softens. Grill the bell pepper for 4-5 minutes on each side until the skin softens slightly and gets a bit charred — after cooling, you can remove the skin if you prefer. Grill the onion for 3-4 minutes on each side until it softens and lightly browns. Add the tomatoes for the last 2 minutes so they get slightly browned but do not fall apart completely.
Pasta
In a large pot, bring 3 liters of water to a boil. Add 1 flat teaspoon of salt. Toss in the tagliatelle and cook according to the package instructions (usually 7-9 minutes for dry pasta) until al dente — it should be soft but still have a slight bite in the center.
Pasta and assembly
Drain the pasta in a colander, reserving 120 ml of the cooking water. Transfer the pasta back to the warm pot on the turned-off burner.
Add 3-4 tablespoons of pesto to the pasta (more to taste), pieces of grilled vegetables, and crumbled cheese. Pour in 2-4 tablespoons of the reserved cooking water to help the sauce combine with the pasta and create a creamy coating. Gently mix with a wooden spoon or tongs for 1-2 minutes until the ingredients are combined and the pasta is evenly coated with pesto.
Finishing
Transfer the tagliatelle to warm plates. Sprinkle with chopped or crumbled cheese on top and optionally grated Parmesan. Add freshly ground pepper and drizzle with a bit of olive oil or extra lemon juice to enhance the flavor.
Additional tips
If you have leftover pesto, store it in a jar, level the surface, and cover it with a thin layer of oil — this will prevent it from darkening. Store the remaining pasta separately from the toppings, and before reheating, add a little water or oil to restore creaminess.
