Preparation steps

Preparing millet groats

Pour the dry millet into a fine mesh sieve. First, rinse it thoroughly with boiling water from the kettle, moving the sieve around so that all the millet is blanched. Then, rinse it under cold running water for about a minute, mixing it with your hand until the water flowing from the sieve is completely clear. This step is crucial to remove the natural bitterness of the millet.

Use a sieve with really small holes; otherwise, the fine grains of the groats will escape. Pouring boiling water over them opens the pores of the grains and makes it easier to wash away the saponins responsible for the bitter taste.

Transfer the rinsed groats to a small pot with a thick bottom. Pour in 200 ml of cold water (maintaining a 2:1 ratio of water to groats). Bring to a boil over medium heat. Once the water starts to boil, reduce the heat to the minimum, cover the pot with a lid, and cook for 15-20 minutes. Do not stir the groats during cooking. After this time, turn off the heat and leave the groats covered for another 10 minutes to absorb the remaining steam. The cooked groats should be soft and fluffy.

Use a pot with a thick bottom to prevent the groats from burning. Do not lift the lid while cooking to keep the steam in. After cooking, you can gently fluff the groats with a fork to aerate them.

Preparation of the batter for the pancakes

Transfer the cooked millet to a large bowl and set aside for 5-10 minutes to cool slightly. To the still warm millet, add crumbled cheese, crack in two eggs, add flour, vanilla sugar, and baking powder. Blend everything into a smooth, uniform mixture using an immersion blender. The mixture should have the consistency of thick cream. If it is too thick, add a tablespoon of milk or water.

It is best to use an immersion blender, as it allows for thorough blending of the groats and cottage cheese, resulting in smooth pancakes. Blend the mixture for about 1-2 minutes until there are no lumps. The warm groats will help the ingredients combine.

Frying the pancakes

In a large non-stick skillet, heat a tablespoon of canola oil over medium heat. To check if the oil is ready, drop a little batter into it – if it starts to sizzle immediately, the temperature is right. If it starts to smoke, it's too hot – reduce the heat and wait a moment.

A large frying pan (26-28 cm in diameter) will work best, allowing you to cook several pancakes at once. Use medium heat, as cooking on too high a setting will burn the pancakes on the outside while leaving them raw on the inside.

Scoop portions of the batter onto a heated skillet using a large spoon, forming round pancakes about 7-8 cm in diameter. Leave space between them so they don't stick together. Fry for about 2-3 minutes on each side until they have a beautiful golden-brown color. Flip them to the other side using a wide, flat spatula. Remove the finished pancakes from the skillet and place them on a plate lined with paper towels to absorb excess fat.

Do not place too thick pancakes, as they may have trouble cooking through. One heaping tablespoon per pancake is the perfect amount. Flip them gently when air bubbles appear on the surface and the edges are set.

While the pancakes are frying, prepare the fruits. Wash the strawberries, dry them, remove the stems, and then slice them. Wash and dry the blueberries. Peel the kiwi and slice it into half-moons. Prepare all the fruits in small bowls so they are ready for decoration.

Involve the kids in washing and preparing the fruits (under supervision). It's a great way to learn and have fun together in the kitchen. You can use cookie cutters to cut interesting shapes from the fruits.

Serve the pancakes warm. On each child's plate, arrange 3-4 pancakes. Now it's time to have fun! Use the prepared fruits to create a rainbow on the pancakes, smiling faces (blueberry eyes, a smile made from a slice of strawberry) or other patterns. Additionally, if you like, you can drizzle the pancakes with a bit of honey and serve with a dollop of thick natural yogurt.
