Preparation steps

Crispy Buckwheat

Prepare the millet: pour 120 g of millet into a sieve and rinse under running hot water for about 30 seconds, shaking the sieve until the water becomes clear—this will remove the natural bitterness. Dry the millet with a paper towel. Heat a dry pan (preferably steel or cast iron) over medium heat. Add the millet and toast for 5–7 minutes, stirring with a wooden spoon every 30–40 seconds, until the grains begin to smell slightly nutty and change color to golden-brown. Remove from heat.

Use a non-coated pan (it's better to feel the roasting process). If you don't have a sieve, transfer the groats to a bowl and pour in a little water, mixing with your hand until the water is less cloudy. Keep an eye on the roasting — the groats burn quickly.

After toasting, transfer the groats to a bowl and add 15 g of rapeseed oil and optionally 60 g of honey (if using). Mix thoroughly so that each grain is lightly coated. Spread in a thin layer on a baking sheet lined with parchment paper. Bake in an oven preheated to 180°C (top-bottom, no fan) for 10–12 minutes, stirring every 4 minutes, until the groats become dry and crunchy and slightly golden. After baking, cool on the baking sheet — it will become even crunchier as it cools.

Use a baking tray with edges and parchment paper. If you don't want to use the oven, you can continue toasting in a pan over medium heat for another 6–8 minutes, stirring constantly, until the grain is crispy.

Strawberries and cream

Prepare the strawberries: wash 400 g of strawberries under cold water, gently dry them with a paper towel. Remove the stems and cut the fruit into quarters (larger ones can be sliced). Transfer to a bowl, add 15 ml of lemon juice and finely chopped half of the mint (about 8 g). Gently mix and set aside for 10–15 minutes until they release their juice — maceration will enhance the flavor and slightly soften the fruit.

Use a sharp knife and a cutting board. If the strawberries are very sweet, do not add sweetener; if needed, you can add 1–2 teaspoons of honey.

Assembly and serving

Prepare the yogurt cream: in a large bowl, place 800 g of natural yogurt, add the remaining 15 ml of lemon juice, and optionally 1–2 tablespoons (about 30 g) of honey if you want a sweeter cream. Whisk for about 1–2 minutes until the mixture is smooth, silky, and slightly fluffy. Check the taste — the cream should be slightly tangy with a hint of sweetness. In serving cups, first layer 1–2 tablespoons of the cream, then a layer of macerated strawberries (about 50–70 g), and on top sprinkle 2–3 tablespoons of crunchy millet. Garnish with a mint leaf. Place in the refrigerator for 10–15 minutes before serving to let the cream chill slightly and the flavors meld.

For whipping, use a metal or glass bowl and a hand whisk. If the cream seems too runny, strain some of the whey from the yogurt through cheesecloth before whipping (about 20 minutes). Serve in small cups or jars of 200–250 ml.
