Preparation steps
Preparing the vegetables
Frying
In a large pot (with a capacity of at least 2.5–3 l), heat the rapeseed oil over medium heat. Add the chopped onion and sauté for 5-7 minutes, stirring every 30 seconds, until the onion becomes translucent and soft (it should be semi-transparent and have a light golden color). Add the grated carrot and sauté for another 3 minutes, stirring to allow the carrot to soften slightly and release its sweetness.
Cooking the soup
Add the tomatoes to the sautéed vegetables and mix. Pour in the vegetable broth and add the bay leaf. Increase the heat to high and bring the soup to a boil. Once the soup starts to boil, reduce the heat to medium-low to let it simmer gently without vigorous boiling.
When the soup starts to boil, add the white rice and mix well. Bring to a boil again, then reduce the heat to low. Cook for 12-15 minutes, stirring every few minutes, until the rice is tender (the grain should be soft in the center but not mushy; if using parboiled rice, check after 10 minutes).
Seasoning
Remove the bay leaves. Season the soup with salt, black pepper, and sugar. Taste the soup and add more salt or a bit of sugar if needed to balance the acidity of the tomatoes. Cook for another 1-2 minutes to allow the spices to combine.
Finishing and serving
If you want, enrich the soup with cream: take about 50 ml of hot soup into a bowl, mix it with the cream (tempering), and then pour the mixture back into the pot, stirring. Heat for 1 minute, but do not boil vigorously after adding the cream to prevent it from curdling. Finally, sprinkle with finely chopped parsley.
Serving
Serve the soup hot in deep plates. You can add an extra spoonful of cream in the center of the plate and sprinkle with fresh parsley. A slice of whole grain bread or a roll pairs perfectly as a side.
