Description
Gorgonzola is an Italian blue cheese with an intense, spicy flavor and a creamy, sometimes crumbly texture, characterized by blue-green veins of mold. The rind can be delicate, while the interior ranges from white to cream; the aroma is distinct, slightly spicy, and salty. Its nutritional values include a significant amount of protein, calcium, and B vitamins, along with higher fat and sodium content, so it should be consumed in moderation; natural mold cultures can support a diverse microbiome, but individuals with intolerances or weakened immunity should exercise caution. Culinary applications of gorgonzola are wide-ranging: it is perfect for sauces, risottos, pasta, salads with pear or nuts, as an addition to steaks and pizza, and on a cheese board with wine. Store the cheese in the refrigerator wrapped in parchment or wax paper, then in foil or a container, in a cool, humid place (vegetable drawer) and use within 1–2 weeks of opening; avoiding freezing will help maintain its creamy texture.
