Wash the broccoli under running water and divide it into florets. Peel the stem with a knife to remove the tougher skin and slice it thinly — this will add a subtle sweetness to the cream. Peel the potatoes and cut them into cubes about 2 cm, peel the onion and chop it finely, and mince the garlic very finely or press it through a garlic press.
Description
Thick, creamy broccoli cream soup with a delicate spider web of yogurt on top — the perfect, slightly spooky dish for Halloween. The base is fresh broccoli sautéed with onion and garlic, thickened with potato and lightly seasoned with freshly ground pepper and nutmeg. The finishing touch is cream and a yogurt decoration drawn with a syringe or spoon, creating a spider web effect. Serve hot in wide bowls, garnished with sautéed wild mushrooms or parsley leaves for contrast in textures and colors. The soup has an intense green color, creamy consistency, and a fresh, slightly nutty aroma of broccoli, with a subtle tanginess from the yogurt in the decoration — great for a themed party or a family dinner on autumn evenings.

Preparation steps
Preparation
If you are using mushrooms as an addition: clean them with a brush or a damp cloth (do not soak), slice them. Heat 10 g of rapeseed oil in a pan and sauté the mushrooms over medium heat for 5-7 minutes until the excess moisture evaporates and a delicate golden crust forms. Season with a pinch of salt and set aside.
Cooking
In a large pot (2.5–3 l), heat the remaining rapeseed oil over medium heat. Add the chopped onion and sauté for 5-7 minutes, stirring with a wooden spoon, until the onion becomes translucent but not brown. Add the minced garlic and sauté for another 30–40 seconds, until fragrant.
Add the chopped potatoes to the pot and sauté for 1-2 minutes, stirring to lightly coat them in fat. Then add the broccoli florets and slices of the stem. Pour in hot vegetable broth to cover the vegetables (about 800 ml) and bring to a boil over high heat.
After boiling, reduce the heat to medium-low and cook for 12-15 minutes, until the potatoes are completely soft (check with a fork — it should not encounter resistance) and the broccoli is tender but still vibrant green.
Blending
Remove the pot from the heat. Let it cool for 1–2 minutes. Then, using an immersion blender (or transfer in batches to a countertop blender), blend the soup until smooth. Blend in pulses for 1–2 minutes, until you achieve a silky consistency without lumps.
Finishing
Add 18% cream to the hot cream and mix thoroughly with a wooden spoon or whisk. Season with salt (start with 4 g) and freshly ground pepper (1 g). Taste and adjust seasoning if necessary. If the cream is too thick, add 50–100 ml of hot broth or water.
Finishing and Serving
Pour the cream into wide bowls. Transfer the natural yogurt into a small decorative syringe or a regular plastic bag with a small corner cut off. Draw concentric circles with the yogurt on the surface of the soup, then use a toothpick to drag from the center to the edges to create a spiderweb effect. Optionally, you can place a "spider eye" made of a peppercorn or a small piece of olive in the center.
Serving
Serve immediately — the soup tastes best hot. You can add garlic croutons or a slice of dark bread to the plate. Additionally, garnish with a few steamed broccoli florets to maintain their bright color.
Fun Fact
Broccoli comes from cabbage varieties cultivated since ancient Rome; its intense green color is due to chlorophyll, which retains its beautiful color during short cooking — that’s why we cook briefly and blend quickly.

Tips
Serve in shallow, wide bowls to make the spider web effect clear. Crispy garlic croutons, a sip of tangy apple cider, or a light apple and celery salad pair well. For a richer version, serve with a spoonful of sautéed mushrooms in the center.
Store the cream in the refrigerator in a tightly sealed container for up to 2 days. Keep the yogurt for decoration separately in the refrigerator. To reheat, warm slowly over low heat while stirring — do not bring to a boil (the cream may curdle).
