Take the butter out of the fridge for 10–15 minutes to soften slightly (it should be pliable, not melted). In a bowl, place the butter and mash it with a fork or use a small spatula until smooth. Peel the garlic and press it through a garlic press or chop it very finely, then add it to the butter. Chop the dill very finely (only the leaves and thinner stems), and add it to the butter. Grate the zest from half a lemon (only the yellow part) and add a teaspoon of lemon juice to the butter. Mix thoroughly until the mixture is homogeneous. Transfer the butter onto a piece of baking paper and shape it into a log or small portions, wrap it up, and place it in the fridge while preparing the fish — the butter should be cool but pliable.
