Preparation steps

Preparing the butter

Take the butter out of the fridge for 10–15 minutes to soften slightly (it should be pliable, not melted). In a bowl, place the butter and mash it with a fork or use a small spatula until smooth. Peel the garlic and press it through a garlic press or chop it very finely, then add it to the butter. Chop the dill very finely (only the leaves and thinner stems), and add it to the butter. Grate the zest from half a lemon (only the yellow part) and add a teaspoon of lemon juice to the butter. Mix thoroughly until the mixture is homogeneous. Transfer the butter onto a piece of baking paper and shape it into a log or small portions, wrap it up, and place it in the fridge while preparing the fish — the butter should be cool but pliable.

Use a knife and cutting board to chop the herbs, or a food processor for quicker chopping. If you don't have a garlic press, chop it very finely and lightly salt it to release the juice. The butter should not be liquid — otherwise, it will leak out of the fish while grilling.

Preparing the trout

Check if the trout are gutted and dried with a paper towel. If not, gut them along the belly, remove the entrails, and rinse thoroughly. Trim the scales if necessary (if the trout has scales, use a scaler knife from the tail to the head). Place the fish skin-side up on a cutting board and make 2–3 diagonal cuts on both sides of the skin (deep enough to reach the flesh, but do not cut through the spine) — the cuts will help the spices and heat penetrate inside. Evenly salt the inside of the fish (use about 1/2 teaspoon of salt per fish; in the recipe, it's 5 g for 4 pieces) and lightly sprinkle with pepper. Place a slice of lemon and a few dill leaves in the cuts and inside the fish. If using thyme optionally, place a sprig inside each fish.

Use a sharp kitchen knife and a cutting board. Drying the skin with a paper towel is crucial — dry skin browns better. Don't overdo the salt inside, too much will make the meat dry.

Preparing the grill

Preheat the charcoal or gas grill to medium-high heat (about 200–220°C). If using a charcoal grill, wait until the coals are covered with a layer of white ash. Clean the grill grate of any residue and lightly oil it (use a brush or a paper towel soaked in oil and tongs). If you have a fish grill or cedar plank, prepare it now (soak the cedar plank in water for at least 30 minutes before placing the fish on it).

It is best to use a grill thermometer. If you don't have one, the touch test (holding your hand above the grill): the air should be very hot for 2–3 seconds. Use protective gloves and tongs to turn the fish.

Application of butter and oil

Take the garlic-dill butter out of the fridge; cut it into 4 equal slices or prepare 4 small rolls with paper. Drizzle a thin layer of rapeseed oil on the skin of the trout (use a brush) — this will prevent the skin from sticking to the grill and help it brown. Place a portion of butter (one slice/roll per fish) on each trout, in the slits and inside.

Use a silicone brush to spread the oil. The butter should be chilled — when it hits the hot grill, it will melt slowly and penetrate the meat.

Grilling

Place the trout on a well-heated grill directly over the heat source. Grill for about 6–8 minutes on one side — do not move the fish during this time. Check the sides: the skin should be golden brown and slightly crispy. Gently flip the fish using a wide spatula or tongs and grill for another 5–7 minutes. The total time for 250 g of trout is usually 12–15 minutes. The fish is ready when the meat near the bone is opaque, easily flakes away from the bones, and separates easily with a fork (the meat should "flake"). If using a thermometer, the internal temperature near the bone should be around 60–63°C.

Use a wide spatula to turn the fish to avoid breaking its skin. If the skin starts to burn, move the fish to a cooler side or use a lid. Don't overdo the flipping — one turn is enough.

Resting and Serving

After removing the fish from the grill, let it rest for 2–3 minutes covered loosely with aluminum foil (resting allows the juices to distribute evenly). Place the trout on a plate, add fresh lemon cut into wedges, and optionally sprinkle with additional dill. If you are using capers, scatter them on top just before serving. Serve with young potatoes with dill, a warm cucumber and tomato salad, or grilled vegetables.

Use large plates and a wide spatula for transferring. Do not leave the fish under foil for too long — 2–3 minutes is enough; longer and the skin will lose its crispiness.

If there is leftover fish, store it in the refrigerator covered with foil at a temperature of 2–4°C for a maximum of 24 hours. Do not refreeze already grilled fish to maintain its texture. For reheating, use the oven at 150°C for 8–10 minutes covered, to avoid drying out the meat.
