Preparation steps

Preparing the asparagus

Rinse the asparagus under cold water. Place each spear individually on a cutting board and snap off the lower, tougher part of the spear by holding one hand at the base and the other near the tip — the spears will break naturally at the transition from the tender part to the tougher part. You can also cut off the lower 2-3 cm with a knife; thicker spears can be lightly peeled with a vegetable peeler from the middle down to remove the fibrous skin.

Use a cutting board and a sharp knife or vegetable peeler. Breaking the stem allows you to remove only the tough part — you will avoid peeling too much flesh. If the stems are very thin, do not peel.

Marinade / garlic oil

Press or finely chop the garlic. In a small saucepan, pour in the olive oil and add the garlic. Heat over very low heat for 3-4 minutes — the oil should only warm slightly and absorb the garlic aroma, it should not boil or smoke. After 3-4 minutes, remove the saucepan from the heat and let it sit for 5 minutes to stabilize the flavors. Before drizzling, strain the garlic cloves or leave small pieces if you prefer a stronger aroma.

Use a small saucepan or a sauceboat and a spoon for mixing. Keep the temperature low — if the garlic starts to brown, the oil will become bitter. You can crush the garlic with the flat side of a knife beforehand to release its aroma more quickly.

In a large bowl, place the washed and prepared asparagus. Drizzle with the prepared, slightly cooled garlic oil and toss evenly, turning the spears with your hands or tongs. Add 1 pinch of salt and 1 pinch of pepper — distribute evenly with your fingers or a spoon. If you are using chili flakes, sprinkle a small amount over them now.

Use a large bowl or baking dish so that all the sprouts can lie freely and be evenly coated with oil. Don't overdo it with the oil — it should be a thin layer, not a bath.

Heating the grill

Preheat the grill to medium-high temperature (about 200-230°C). If you have a charcoal grill, wait until the coals are covered with a thin layer of white ash. If you are using a gas grill, set up two zones: direct and indirect heat. Clean the grill grate thoroughly with a brush, then lightly oil the surface with a paper towel using tongs (to prevent sticking).

Use a grill thermometer if you have one. A hard, clean grill brush and protective gloves are best. Oiling the grill prevents the asparagus from sticking.

Grilling

Arrange the asparagus perpendicular to the grill bars (with the tips in one direction) so they don't fall between the bars. Grill uncovered for 2-4 minutes on one side, until clear grill marks appear and the edges start to brown. Gently turn with tongs and grill for another 2-3 minutes — the spears should be tender but slightly soft when pierced with a knife through the center. The time depends on the thickness of the spears: thin 2-3 minutes, thick 4-6 minutes total.

Use long tongs to turn them, avoid forks that pierce the spears and release their juices. Don't overdo the time — asparagus cooks quickly; check for tenderness with a fork.

Finishing and serving

Transfer the grilled asparagus to a plate. Drizzle with an additional tablespoon of garlic oil and immediately squeeze lemon juice evenly over the spears (1/2 lemon per serving, the rest can be served on the side). Grate Parmesan on a coarse grater directly over the asparagus to create delicate flakes. Add any remaining salt and freshly ground pepper to taste. Sprinkle with finely chopped chives, if using.

Use a cheese grater (microplane or coarse grater) and a small lemon squeezer. The melting cheese quickly melts on the warm shoots and creates an appetizing texture — serve immediately.

Alternatives and Additions

You can serve the asparagus with pieces of smoked salmon, slices of grilled chicken breast, or as a side dish with young potatoes and dill. Additionally, you can add chili flakes for heat or replace the parmesan with crumbled goat cheese.

🥡 Storage

Store in the refrigerator for a maximum of 1 day in an airtight container — asparagus loses its texture. Freezing already grilled asparagus is not recommended. To reheat: briefly (1-2 min) on a hot grill pan to restore slight grill marks.
