Prepare the cottage cheese: transfer the cottage cheese to a large bowl. Use a fork to crumble the cottage cheese first with EARLY, short movements — the goal is to achieve a smooth, slightly creamy consistency without lumps. This will take about 1-2 minutes. If the cottage cheese is very dry, add 1-2 tablespoons of cold water and mix thoroughly.

Use a large, shallow bowl and a metal fork or whisk. If you have an immersion blender, you can blend on low speed for 10-15 seconds, but be careful not to make a completely smooth cream — a slight texture is desired.

Add chopped dill and chives: wash the herbs, dry them with a paper towel, trim the thicker ends, and finely chop with a knife. Add the whole bunch of dill and the whole bunch of chives to the cottage cheese. Mix with a spoon to evenly distribute the herbs in the cottage cheese.

Brush one side of each slice with a thin layer of rapeseed oil using a kitchen brush or spoon — this will prevent sticking and give a nice golden color while grilling.
