Preparation steps
Preparing the asparagus
Marinade / garlic oil
Press or finely chop the garlic. In a small saucepan, pour in the olive oil and add the garlic. Heat over very low heat for 3-4 minutes — the oil should only warm slightly and absorb the garlic aroma, it should not boil or smoke. After 3-4 minutes, remove the saucepan from the heat and let it sit for 5 minutes to stabilize the flavors. Before drizzling, strain the garlic cloves or leave small pieces if you prefer a stronger aroma.
Marinade / seasoning
In a large bowl, place the washed and prepared asparagus. Drizzle with the prepared, slightly cooled garlic oil and toss evenly, turning the spears with your hands or tongs. Add 1 pinch of salt and 1 pinch of pepper — distribute evenly with your fingers or a spoon. If you are using chili flakes, sprinkle a small amount over them now.
Heating the grill
Preheat the grill to medium-high temperature (about 200-230°C). If you have a charcoal grill, wait until the coals are covered with a thin layer of white ash. If you are using a gas grill, set up two zones: direct and indirect heat. Clean the grill grate thoroughly with a brush, then lightly oil the surface with a paper towel using tongs (to prevent sticking).
Grilling
Arrange the asparagus perpendicular to the grill bars (with the tips in one direction) so they don't fall between the bars. Grill uncovered for 2-4 minutes on one side, until clear grill marks appear and the edges start to brown. Gently turn with tongs and grill for another 2-3 minutes — the spears should be tender but slightly soft when pierced with a knife through the center. The time depends on the thickness of the spears: thin 2-3 minutes, thick 4-6 minutes total.
Finishing and serving
Transfer the grilled asparagus to a plate. Drizzle with an additional tablespoon of garlic oil and immediately squeeze lemon juice evenly over the spears (1/2 lemon per serving, the rest can be served on the side). Grate Parmesan on a coarse grater directly over the asparagus to create delicate flakes. Add any remaining salt and freshly ground pepper to taste. Sprinkle with finely chopped chives, if using.
Alternatives and Additions
You can serve the asparagus with pieces of smoked salmon, slices of grilled chicken breast, or as a side dish with young potatoes and dill. Additionally, you can add chili flakes for heat or replace the parmesan with crumbled goat cheese.
