This is a classic, nationwide suggestion for sandwiches and bread, but with the addition of cottage cheese and chives, it gains a fresh spring character. The spread has a creamy consistency, a slightly salty taste from the tuna and pickled cucumber (optional), and a herbal note from the chives. It works great on slices of rye bread, whole grain rolls, or as a dip for vegetables – it is nutritious, quick, and easy to modify to suit the tastes of your household.

Preparation steps

Prepare the eggs. Place 2 eggs in a medium pot and cover them with cold water so that the water is 2-3 cm above the eggs. Put the pot on high heat and bring to a boil. Once the water starts boiling, reduce the heat to medium and cook uncovered for 9 minutes to achieve hard-boiled eggs with a well-set yolk.

Use a pot with a diameter suitable for the number of eggs, so they don't bump into each other. Set a timer for 9 minutes. After cooking, rinse the eggs with cold water or place them in a bowl of ice water for 3-4 minutes — this will make peeling easier.

Drain the tuna. Open the can of tuna and pour the contents through a sieve or drain thoroughly over a bowl, pressing with a spoon to remove excess liquid. Transfer the drained tuna to a large bowl and flake it with a fork into smaller pieces.

Use a strainer to drain and a large bowl. Do not discard the liquid — you can use it for fish soup, but not for the paste, as it will thin the consistency. The tuna meat should be moist, but not watery.

Peel and chop the eggs. Peel the boiled eggs and cut them in half first, then into smaller pieces. Add the eggs to the bowl with tuna and mash with a fork or potato masher to the desired consistency — leave a few larger pieces for texture.

Use a cutting board and a sharp knife. If you don't want chunks, briefly blend with a blender, but be careful not to make the paste too smooth.

Add the cottage cheese and mix. To the bowl with tuna and egg, add 150 g of semi-fat cottage cheese. Mix vigorously with a fork or spatula until the ingredients combine into a creamy mass. If the mixture is too thick, add 1–2 tablespoons of water from the drained tuna or a little cream (alternatively yogurt) until you reach the desired consistency.

Use a wooden spoon or a silicone spatula. If you are using grainy cottage cheese and want a smooth paste, mash the cottage cheese further with a fork before mixing.

Chop the onion and chives. Peel the onion and cut it into small cubes (about 2-3 mm). Wash the chives, dry them, and chop them finely into small pieces. Add both ingredients to the bowl with the paste.

Use a sharp knife and a cutting board. If the onion is strong, after cutting you can rinse it with cold water and dry it — this will remove the excess sharpness.

Season the paste. Add salt and pepper: start with a pinch of salt and two pinches of freshly ground pepper, mix and taste. If you are using pickled cucumber or lemon juice (optional), add finely chopped pickled cucumber and a few drops of lemon juice now, mix again and adjust the seasoning.

Season gradually — it's easier to add than to take away. Use a teaspoon for tasting. Additionally, you can add pickled cucumber or lemon for freshness.

Serving. Transfer the paste to a bowl and garnish with additional chives. Serve immediately on whole grain bread, a roll, or as a dip for raw vegetables (carrots, bell peppers).

Use a wide spoon to spread on the bread. The best is a thickly spread slice of dark bread with added pickled cucumber or a slice of fresh cucumber for contrast.

Store in a closed container in the refrigerator for up to 48 hours. Before serving, mix the paste and check the seasoning — a sprinkle of salt may be stronger after a few hours. Do not freeze.
