Description

Pumpkin and millet patties are an autumnal, aromatic main dish perfect for Halloween — golden patties with a delicate, slightly sweet note of pumpkin, complemented by cheese and roasted onion, served on a thick, slightly tangy tomato sauce. The dish combines Polish seasonal ingredients (pumpkin, millet, parsley) with a simple technique: roasted pumpkin provides caramelization and depth of flavor, while millet adds structure and a slightly nutty taste. Serve with braised vegetables, sauerkraut salad, or roasted potatoes. Visually, they can be shaped into "cakes" resembling pumpkin medals, and pumpkin seeds can be used for crunch and parsley for freshness. This dish is filling, easy to prepare for a beginner cook, and works wonderfully on a Halloween table in both everyday and festive versions.

Preparation steps

Preparation of pumpkin and groats

1

Prepare the pumpkin: if you are using Hokkaido, wash the skin; if using another type, peel, remove the seeds, and cut the flesh into cubes measuring 2–3 cm on each side. Preheat the oven to 200°C. Spread the pumpkin on a baking sheet lined with parchment paper, drizzle with 1 tablespoon of rapeseed oil (15 g), and sprinkle with a light pinch of salt. Bake for 20–25 minutes until the pieces are soft and slightly browned at the edges. The pumpkin should easily pierce with a fork.

Ingredients: Pumpkin, Rapeseed oil, Salt
Use a baking tray lined with parchment paper. If the pumpkin is very juicy, bake longer (up to 30 min). Browning adds flavor — check for softness with a fork.
2

In the meantime, rinse the millet in a sieve under cold water for 30 seconds to remove the bitterness. Transfer the millet to a pot, add water in a 1:2 ratio (200 g of millet → 400 ml of water). Add a pinch of salt (about 1 g). Bring to a boil over medium heat, cover, and reduce the heat to the minimum. Cook for 12–15 minutes until the water is absorbed. After cooking, remove from heat and let it sit covered for 5 minutes, then fluff with a fork.

Ingredients: Millet, Salt
Use a pot with a lid. Fluffing with a fork prevents the grains from clumping together. If the grains are hard after 15 minutes, add 2–3 tablespoons of water and cook for another 2–3 minutes.

Frying vegetables

3

Peel and finely chop the onion. In a medium skillet, heat 1 tablespoon of canola oil (15 g). Add the onion and sauté for 4–6 minutes until it becomes translucent and slightly golden. Add the chopped garlic (15 g) and sauté for another 30–40 seconds until the garlic becomes fragrant — be careful not to burn it.

Ingredients: Onion, Garlic, Rapeseed oil
Use a pan with a diameter of 24–28 cm. Fry over medium heat, stirring with a wooden spoon. If the garlic darkens too quickly, reduce the heat.

Mixing the mixture for the patties

4

In a large bowl, transfer the baked pumpkin (after cooling) and mash it with a fork or potato masher into a coarse puree. Add the cooked and fluffed millet, sautéed onion with garlic, grated cheese (100 g), eggs (120 g), wheat flour (60 g), 40 g of breadcrumbs, and salt and pepper to taste. Mix thoroughly by hand or with a large spoon — the mixture should be moist but firm enough to shape into patties. If the mixture is too loose, add breadcrumbs by the spoonful; if too dry, add 1–2 tablespoons of water.

Ingredients: Pumpkin, Millet, Onion, Garlic, Cheese, Wheat flour, Breadcrumbs, Salt, Black pepper
Use a large bowl (at least 3 l) and a wooden spoon or your hands (preferably with kitchen gloves). The mixture should hold its shape when squeezed in your hand — this is an indicator of readiness.

Shaping the patties

5

Form patties the size of your hand (about 70–90 g each) from the mixture. First, wet your hands with water, take a portion of the mixture, form a ball, and then flatten it to a thickness of about 1–1.5 cm. Place the formed patties on a tray or plate, leaving about 2 cm of space between them.

Ingredients: Breadcrumbs
If the mixture sticks to your hands, wet them from time to time. To get even patties, use an ice cream scoop for portioning.

Cooling

6

Place the shaped patties in the refrigerator for 15–20 minutes to firm up slightly — this will improve their structure during frying and reduce the risk of them falling apart.

Use a covered plate or plastic wrap. If you're short on time, you can skip this step, but cooling improves the result.

Breading

7

Prepare a plate with the remaining breadcrumbs (40 g). Take the cutlets out of the fridge and coat each one on both sides with breadcrumbs, gently pressing to ensure the coating adheres evenly.

Ingredients: Breadcrumbs
Apply the breading just before frying so it doesn't have time to soften. If you prefer a thicker breading, prepare more breadcrumbs.

Frying the cutlets

8

In a large skillet, heat 2 tablespoons of canola oil (30 g) over medium-high heat. When the oil is hot (slightly shimmering), place the cutlets in the skillet. Fry for 3–4 minutes on each side until the coating is golden brown and crispy. After flipping, reduce the heat to medium so the cutlets can warm through on the inside. Once cooked, drain on paper towels.

Ingredients: Rapeseed oil, Breadcrumbs
Use a pan with a diameter of 26–28 cm. Do not overcrowd the pan — leave space so that the oil temperature does not drop. A sign of proper frying: an even golden crust and no raw batter at the edge.

Preparation of tomato sauce

9

In a pan, heat 1 tablespoon of rapeseed oil (15 g). Add finely chopped onion (if you want, use an additional half onion) and sauté for 3–4 minutes until softened. Add garlic (5 g) and sauté for 30 seconds. Pour in peeled tomatoes (700 g), add oregano (2 g), sugar (10 g), and salt to taste. Cook on low heat for 15–20 minutes, stirring occasionally, until the sauce thickens slightly. If using cream (optional), add 2 tablespoons (about 30 g) at the end and gently bring to a boil.

Ingredients: Rapeseed oil, Onion, Garlic, peeled tomatoes, Oregano, Sugar, Sour cream
Use a medium pot. The sauce should simmer gently — do not allow it to boil vigorously. If the sauce is too sour, add another pinch of sugar.

Seasoning the sauce

10

Taste the sauce and season with salt and pepper. If the consistency is too thin, cook for a few more minutes uncovered. You can blend the sauce with an immersion blender if you want a smooth texture — for a rustic version, leave the tomato pieces.

Ingredients: peeled tomatoes, Salt, Black pepper
Use an immersion blender on low speed, hold the container steady. Be careful with the hot sauce — steam burns while blending.

Serving

11

On a plate, spread a portion of tomato sauce, then place 2–3 cutlets on top of the sauce (depending on their size). Sprinkle the dish with finely chopped parsley (30 g). Optionally, sprinkle with toasted pumpkin seeds (30 g) for crunch. Serve immediately to keep the coating crispy.

Ingredients: peeled tomatoes, Parsley
Use large, flat plates. If you're preparing for Halloween, arrange the cutlets artistically — for example, in the shape of a "pumpkin" or with decorative elements made of parsley.

Final tips

12

If the patties are too soft after frying, place them in an oven preheated to 180°C for 5–8 minutes to finish cooking. Store leftovers in the refrigerator in a sealed container for up to 2 days. To reheat, use the oven or a skillet to regain their crispiness.

Do not store the cutlets in the sauce for too long — the coating will become soggy. For quick reheating, use the oven at 180°C for 8–10 minutes.

Fun Fact

💡

Pumpkin was a popular ingredient in Polish peasant cuisine; it was once used as a cheap and filling vegetable. Millet is one of the oldest grains cultivated in Central Europe, valued for its digestibility.

Tips

🍽️ Serving

Serve the patties hot, directly after frying/baking. Spread the sauce thinly on the plate, and place the patties on top. For contrast, serve with a salad of pickled cabbage or roasted potatoes with rosemary. Sprinkling pumpkin seeds adds crunch and a nice appearance.

🥡 Storage

Store the patties and sauce separately in airtight containers in the refrigerator for up to 48 hours. Reheat the patties in a skillet or in the oven (180°C, 8–12 min), and gently warm the sauce in a saucepan over low heat. Freeze only the patties without the sauce, well-sealed for up to 3 months — thaw in the refrigerator before serving.
