Description

Moist pumpkin and walnut muffins combine the intense, autumnal aroma of spices (cinnamon, nutmeg) with the gentle sweetness of honey and brown sugar. This dessert is inspired by the seasonal flavors of Poland — pumpkin puree gives the muffins moisture and a beautiful orange color, while the nuts add crunch and depth. Perfect for a Halloween party: they can be dusted with powdered sugar and decorated with icing ghosts or orange peel, which enhances the aroma. The muffins taste great slightly warm, served with spiced tea or coffee; they are also suitable for packing as a snack. The recipe is designed to guide a beginner cook step by step through making the puree, combining the ingredients, and proper baking.

Preparation steps

Preparation of ingredients

1

Take the eggs and milk out of the fridge about 30 minutes before starting, so they reach room temperature. Preheat the oven to 180°C (fan 160°C). Prepare the muffin tin — line it with 12 paper liners or grease the tin with a thin layer of rapeseed oil.

Use a standard form for 12 muffins or liners. The temperature of the ingredients affects the structure of the batter — ingredients at room temperature will combine better.

Pumpkin puree (if you don't have it ready)

2

Cut the pumpkin in half, scoop out the seeds, and cut the flesh into pieces. Place it on a baking sheet skin side down, bake at 200°C for 30–40 minutes until the flesh is soft (a fork easily goes into it). Let it cool, remove the skin, and blend with a blender until smooth puree. Weigh out 300 g of puree; you can freeze the excess.

Ingredients: Pumpkin
For baking, use a baking tray lined with parchment paper. The puree is ready when it is completely soft and smooth after blending — it should not be fibrous.

3

In a large bowl, sift 300 g of all-purpose flour, add 150 g of brown sugar, 12 g of baking powder, 2 g of baking soda, 3 g of salt, 4 teaspoons of cinnamon (4 g), and a pinch of nutmeg (1 g). Mix everything with a whisk or spoon to evenly distribute the ingredients.

Ingredients: Wheat flour, Baking powder, Baking soda, Salt, Cinnamon, Nutmeg
Sifting flour aerates it and removes lumps. Use a metal or silicone whisk. Check if the baking powder forms lumps.

Wet ingredients

4

In a separate bowl, crack 120 g of eggs (2 pieces) and gently whisk with a fork until the whites and yolks are combined. Add 300 g of pumpkin puree, 60 g of honey, 60 g of rapeseed oil, and 80 ml of milk. Mix with a whisk or a hand spoon until the mixture is smooth and free of large lumps.

Ingredients: Pumpkin, Honey, Rapeseed oil, Milk
Use a wooden spoon or whisk. If you are using a mixer, mix on low speed — do not aerate the mixture too much.

Combining the ingredients

5

Make a well in the center of the dry ingredients. Pour the wet ingredients into the dry and gently mix with a silicone spatula or wooden spoon: mix only until there is no visible dry flour — the batter may have slight lumps. Avoid mixing for a long time to prevent the muffins from becoming tough.

Ingredients: Wheat flour, Baking powder, Baking soda, Salt, Cinnamon, Nutmeg, Pumpkin, Honey, Rapeseed oil, Milk
Use a large bowl for comfortable mixing. Mixing 'dry' and 'wet' just until combined is the key to fluffy muffins.

Adding nuts

6

Add 100 g of chopped walnuts to the mixture and gently fold them in to distribute evenly throughout the batter. Set aside a few larger pieces of walnuts for sprinkling on top before baking.

Nuts can be lightly toasted in a dry pan for 2–3 minutes (stirring) to release their aroma — be careful not to burn them.

Filling the mold

7

Fill the cupcake liners with batter to about 2/3 of their height (use an ice cream scoop or a tablespoon). Leave some space for rising — the muffins will rise while baking.

It's best to use an ice cream scoop to ensure even portions. If you don't have cupcake liners, grease the insides of the mold with a thin layer of oil.

Baking

8

Place the pan in the preheated oven and bake for 20–25 minutes at 180°C (fan oven 160°C). After 20 minutes, check with a dry toothpick: insert the toothpick into the center of one muffin — if it comes out dry or with a few crumbs, the muffins are ready; if it is wet, bake for another 2–3 minutes.

Bake in the middle of the oven. Every oven heats a little differently — watch the muffins and test with a toothpick, instead of relying solely on time.

Cooling

9

Remove the pan from the oven and let it cool on a rack for 5 minutes. Then gently remove the muffins from the pan and let them cool completely on the rack for another 20–30 minutes — this will prevent the bottoms from becoming soggy.

Use a spoon or a silicone spatula to remove them — gently lift the sides to ensure the muffins come out whole.

Decoration and serving

10

Before serving, dust the muffins with 50 g of powdered sugar through a sieve or create delicate patterns. For a Halloween effect, decorate with orange zest (6 g) as 'spider webs' or make simple decorations with icing (powdered sugar mixed with a little water). Optionally, serve warm, decorated with pieces of nuts.

Ingredients: Powdered sugar, Orange zest
If you are using powdered sugar optionally, sprinkle it just before serving to prevent it from getting soggy. Additionally, you can add orange zest for freshness and decoration.

Fun Fact

💡

Pumpkins have been cultivated in Europe since the 16th century and quickly became a symbol of autumn. In Poland, pumpkin appears in traditional regional dishes, and its puree is perfect for baking due to its high water content and natural sweetness.

Tips

🍽️ Serving

Serve the muffins slightly warm (10–15 minutes after taking them out of the oven). For guests, prepare a plate with extra pieces of nuts and strips of orange. Ginger tea or coffee with a splash of milk pairs well with the drinks.

🥡 Storage

Store muffins in an airtight container at room temperature for up to 2 days. To extend their shelf life, place them in the refrigerator (up to 5 days) — before serving, heat for 10–15 seconds in the microwave. You can also freeze baked muffins for up to 3 months; thaw at room temperature.
