Preheat the oven to 200°C (top-bottom). Peel the pumpkin (if using hokkaido, peeling is optional), cut it in half, remove the seeds with a spoon, and then cut it into cubes about 1.5–2 cm on each side. Place the pumpkin cubes in a large bowl.
Description
Autumn salad combining creamy black beans, sweet corn, and roasted pumpkin — perfect for a Halloween table, as the contrast of the black beans with the orange pumpkin creates a striking seasonal look. The salad features a distinct, slightly spicy and tangy dressing made from lime and apple cider vinegar, seasoned with cumin. It works great as a standalone dish for guests, a side for roasted meats (duck, ribs), or a cold appetizer for a party. Visually: dark black beans, yellow corn kernels, golden pumpkin cubes, and green parsley leaves — a stunning Halloween contrast.

Preparation steps
Preparing the pumpkin
To the bowl with pumpkin, add 15 g of olive oil (1 tablespoon), 2 g of cumin (1 teaspoon), and 1 g of salt (1 pinch). Mix by hand or with a spoon so that each cube is lightly coated with oil and seasoning. Spread evenly on the baking sheet in a single layer, not tightly — this will allow the pumpkin to brown nicely.
Place the tray in the preheated oven and bake for 25–30 minutes. After 15 minutes, open the oven and gently stir the pumpkin with a spatula to ensure it browns evenly. The pumpkin is ready when the edges of the cubes are golden and the center can be easily pierced with a fork.
Preparing the vegetables
Drain the black beans and corn in a colander, rinse with cold water for about 20–30 seconds to remove excess liquid. Set aside to drain in a sieve for 5–10 minutes, then gently pat dry with a paper towel if it is very wet.
Slice the red onion into thin half-rings (about 2–3 mm). Dice the red pepper finely. Peel the garlic and chop it finely or press it through a garlic press. Chop the parsley very finely. Grate a thin layer of zest from the lime (only the green part) and squeeze out the juice — you will need about 2 tablespoons of juice (from 1–2 limes).
Dressing
In a small bowl, combine 30 g of olive oil (2 tablespoons), 15 g of apple cider vinegar (1 tablespoon), freshly squeezed lime juice (from step 5), lime zest, 4 g of cumin (2 teaspoons), 1 g of salt (1 pinch), and 1 g of pepper (1 pinch). Whisk vigorously with a fork or whisk for about 30 seconds until the dressing becomes slightly emulsified. If you want a touch of sweetness, optionally add 10–15 g of honey.
Salad Assembly
In a large bowl, mix the drained black beans, corn, diced bell pepper, and half-moon slices of red onion. Add the cooled roasted pumpkin (not hot, so it doesn't soften the beans) along with the chopped garlic and lime zest. Drizzle with the prepared dressing.
Gently mix all the ingredients, check the taste, and season if necessary with salt, pepper, or lime juice. If you want to add some heat, sprinkle with 2 g of chili flakes (optional).
Finishing and serving
Transfer the salad to a serving platter or bowl. Generously sprinkle with chopped parsley. Finally, add crumbled feta cheese (optional) and gently distribute it to create a contrasting point on the surface of the salad. Serve at room temperature or slightly chilled.
Serving for Halloween
For a Halloween effect, place a few larger pumpkin cubes in the center, and surround them with dark beans and yellow corn kernels — the color contrast will resemble "eye sockets." You can add thin strips of black olives as a decoration that resembles spider webs or eye sockets.
Fun Fact
Black beans are popular in Latin American cuisines and provide an intense color contrast — their color is used to create "dark" dishes for Halloween. Pumpkin, on the other hand, has been a symbol of autumn and Halloween for centuries.

Tips
Serve the salad at room temperature or slightly chilled. It pairs perfectly with sourdough bread, as a side to roasted duck, or with grilled chicken breast. Serve feta cheese separately; if you want a vegan version, it can be replaced with crumbled tofu.
Store in a closed container in the refrigerator for up to 48 hours. It's best to add the dressing just before serving; if you plan to store it longer (up to 72 hours) — this will prevent the vegetables from becoming soggy. Reheating is not recommended, but you can take the salad out of the refrigerator 30 minutes before serving to allow the ingredients to reach room temperature.
