Wash the strawberries under cold running water, gently dry them with a paper towel. Cut off the stems. Cut the larger pieces in half so that the pieces are of similar size. Wash the rhubarb, trim the ends, and remove the fibers: run a knife along the stalk from one end to the other to separate the fibers, then cut into pieces 2-3 cm long. Wash the apple, cut it in half, remove the core, and cut it into quarters or cubes similar in size to the strawberries.

Use a sharp knife and a cutting board. Even pieces will ensure uniform baking. Drying the strawberries will prevent the glaze from becoming soggy.

Preparing the glaze

In a small bowl, combine lemon juice (30 ml) with honey (40 g). Mix with a teaspoon until a smooth, pourable glaze forms. Taste and adjust the flavor: if the honey is very sweet, add a few more drops of lemon juice. The glaze should be quite fluid to easily coat the fruit with a fork.

Use a metal or glass bowl. If the honey is very thick, heat it for 10-15 seconds in the microwave (low power) or in a water bath to make it liquid. Do not overheat.

On each skewer, alternate: a piece of oscypek, a strawberry (half or whole fruit depending on size), a piece of apple, and a piece of rhubarb. Leave about 1 cm of the skewer free at the end for easy handling. Arrange the ingredients so that the oscypek is not at the end (this makes it easier to turn).

Use a large plate or board for arranging. If the sticks were not soaked, do not insert them too deeply into the moist fruit (they may crack).

Glaze

Arrange the prepared skewers on a large flat plate. Using a silicone brush, gently coat each piece of fruit and each piece of cheese with the prepared glaze. You don't need to soak the cheeses — a thin layer is enough to add shine and flavor.

If you don't have a brush, use a teaspoon to spread the glaze on top. You can collect any excess glaze and gently heat it to brush it on again.

Frying and browning

Preheat a grill pan or a regular non-stick pan over medium-high heat. Pour in canola oil (about 15 g) and spread it with a brush or paper towel. When the oil starts to shimmer slightly (after 30-40 seconds), place the skewers in the pan in a single layer. Fry for 1.5-2 minutes on each side — turn every 1.5-2 minutes until the oscypek is nicely browned and the fruits start to swell slightly and gain shine. The entire process for a single batch takes about 6-8 minutes.

Use a spatula to flip or kitchen tongs. Don't let it burn — if the pan starts to smoke, reduce the heat. You will recognize readiness by the golden-brown color of the cheese and the slightly soft texture of the fruits.

Finishing and serving

Transfer the hot skewers to a plate lined with paper towels (for a quick drain of excess oil). Sprinkle with finely chopped fresh mint (optional) and serve immediately. You can add natural yogurt or thick cottage cheese mixed with a bit of honey as a dip.
