Wash the young cabbage under running water, removing any damaged outer leaves. Transfer the cabbage to a cutting board and, using a sharp knife, cut the head in half, then into quarters. Remove the tough core (the white part in the center) by holding the knife at an angle and cutting out a cone shape. Place the quarters on the board and finely shred them (0.5–2 mm). If you're not experienced, keep the knife steady and slide thin slices; you can also use a mandoline set to a thin cut.
