Lazy dumplings with pasta and strawberries are a spring Polish dessert that combines traditional, delicate cheese dumplings with egg pasta and fresh strawberries. The dish combines the creamy texture of the cheese with the lightness of the pasta, complemented by the tangy, juicy strawberries and a subtle creamy note. It is a comforting dessert reminiscent of home-cooked flavors – perfect for an afternoon gathering with family, a snack, or a simple garden party. Serve immediately, preferably slightly warm; excellent with a mint leaf and a sprinkle of powdered sugar for decoration. Visually, the white dumplings, yellowish pasta, and vibrant red strawberries create a striking contrast.
Prepare the cottage cheese: if it is very wet, drain it in a sieve for 10–15 minutes or press it through a fine sieve/potato ricer. If you want to avoid lumps, pass the cottage cheese through a sieve or grind it in a meat grinder. Place the drained cottage cheese in a large bowl.
Ingredients:
Cottage cheese
Use a large metal or glass bowl. Cheesecloth or a sieve will be helpful for draining. A common mistake is using too moist cottage cheese — this leads to adding too much flour and the dumplings become tough.
2
To the cottage cheese, add the egg(s), 30 g of sugar, and a pinch of salt. Crack the eggs and mix the ingredients with a fork or wooden spoon just until combined. Then gradually add the flour — first 80 g, mix gently and check the consistency. The dough should be soft, slightly sticky, but manageable. If it sticks too much to your hands, add flour by the tablespoon until you achieve a smooth ball.
Use a fork, and then your hands to quickly knead. If you're unsure, add the flour gradually — too much flour will make the dumplings tough. If you don't have a mixer, knead by hand for 1-2 minutes.
3
On a floured countertop, divide the dough into 3-4 parts. Shape each part into a roll about 2 cm thick. Using a floured knife, cut the rolls into diagonal pieces (dumplings). If the dough is too soft, dust your hands with flour. Cut quickly to prevent the dough from drying out.
Ingredients:
Wheat flour
Use a wide kitchen knife for cutting or a dough cutter. A common mistake: the roll is too thin (the dumplings will fall apart) or too thick (they will be raw inside).
Lazy dumplings - cooking
4
In a large pot, bring 2.5–3 liters of water to a boil with 1 teaspoon of salt. When the water is boiling, add the dumplings in batches. After adding, gently stir with a spoon to prevent them from sticking to the bottom. Cook for 2–3 minutes from the moment they float to the surface (they should puff up slightly). Remove with a slotted spoon and set aside on a plate.
Ingredients:
Salt
Use a large pot (at least 3 l) and a slotted spoon. Do not cook too many dumplings at once — the drop in water temperature will prolong cooking and cause the dumplings to stick together.
Pasta
5
In another pot, bring 2 liters of water to a boil with 1 teaspoon of salt. Add the pasta to the boiling water and cook according to the manufacturer's instructions (usually 7–9 minutes) until al dente. Drain the pasta in a colander, reserving a tablespoon of the cooking water if you want to thin the sauce.
Ingredients:
Pasta, Salt
Use a wide pot; cook the pasta uncovered. Check the pasta 1 minute before the time – it should be firm, not overcooked.
Strawberry sauce
6
Cut the strawberries in half or quarters depending on their size. In a bowl, mix the strawberries with the remaining sugar (20 g) and optionally vanilla sugar. Let it sit for 5–10 minutes until they release their juice. If you want a smooth sauce, blend 1/3 of the strawberries with the juice into a puree, leaving the rest in pieces.
Ingredients:
Strawberry, Sugar, Vanilla sugar
Use a sharp knife and don't forget to remove the stems. For blending, use a hand-held or stationary blender. For a more aromatic flavor, you can add a few drops of lemon juice (optional).
Finishing
7
In a large skillet, melt the butter over medium heat (about 1–2 minutes). Add the cooked pasta and sauté lightly for 1–2 minutes, stirring to coat it in the butter. Add the cooked lazy dumplings and gently mix for 30–45 seconds, just to combine - the dumplings should not break apart. If the mixture is too dry, add 1–2 tablespoons of pasta cooking water.
Ingredients:
Butter, Pasta, Cottage cheese
Use a pan with a diameter of 26–28 cm. Stir gently with a wooden spoon or silicone spatula to avoid crushing the dumplings. Be careful not to burn the butter — keep an eye on the heat.
Assembly and serving
8
On a plate, arrange a portion of pasta with dumplings. On top, add 2–3 tablespoons of strawberry sauce and a few whole pieces of strawberries. Add a spoonful of cream next to it or gently mix it with the sauce. Finally, sprinkle lightly with powdered sugar (optional) and garnish with a mint leaf.
Use a flat dessert plate. For a nice presentation, arrange the strawberries asymmetrically on one side. You can also add a few mint leaves for freshness.
Final tips
9
Serve the dessert immediately while everything is still slightly warm — that's when the flavors combine best. If you prepare it in advance, keep the strawberry sauce and sautéed noodles separate; before serving, gently reheat and add fresh strawberries.
Ingredients:
Strawberry, Butter
If you are making portions for a party, keep the sauce and dumplings separate until the last moment. Avoid storing ready-made dumplings with strawberries for a long time — they will lose their elasticity and the freshness of the fruit.
Fun Fact
💡
Lazy dumplings are a traditional Polish delicacy made from cottage cheese; the name 'lazy' probably comes from the simplicity of preparation — there is no need to shape small balls like with potato dumplings.
Serve slightly warm. You can add natural yogurt instead of cream for a lighter version. For a richer flavor, drizzle the strawberries with a bit of lemon juice and add fresh mint as a decoration.
🥡Storage
Store the sautéed pasta with dumplings and strawberry sauce separately in the refrigerator for up to 24 hours. Gently reheat in a pan with a little butter or in the microwave on low power. It is best to store the strawberries separately and add fresh before serving.
